Ingredients

  1. 2 tablespoons extra-virgin olive oil
  2. 12 ounces mild Italian sausage, sliced
  3. 7 ounces marinara sauce, plus more for topping
  4. 2 bell peppers, thinly sliced
  5. 1 large onion, thinly sliced
  6. 1 teaspoon salt
  7. 1 teaspoon pepper
  8. 4 crusty, semolina seeded or plain 10-inch submarine sandwich rolls
  9. 8 ounces whole-milk mozzarella cheese, shredded

Instructions

  1. Preheat the oven to 350 degrees F.
  2. Heat a skillet over medium heat and add the oil, then add the sausage and saute until brown. Add the marinara sauce, bell peppers, onion, salt and pepper and saute until the ingredients are incorporated and hot, about 5 minutes.
  3. Put some of the sausage and bell pepper mixture on each sandwich roll, top with some more marinara sauce, add the mozzarella and bake until the cheese is browned, about 5 minutes. Serve immediately.
