Garlic Cheddar Chicken

He said it was the nicest meal anyone besides his mother had ever prepared for him when I served him this blackberry pork tenderloin on a date. I’m from southern Louisiana, so that’s a really great compliment.

Ingredients

  1. ½ cup butter
  2. 4 cloves garlic, minced
  3. ¾ cup dry bread crumbs
  4. ½ cup freshly grated Parmesan cheese
  5. 1 ½ cups shredded Cheddar cheese
  6. ¼ teaspoon dried parsley
  7. ¼ teaspoon dried oregano
  8. ¼ teaspoon ground black pepper
  9. ⅛ teaspoon salt
  10. 8 skinless, boneless chicken breast halves – pounded thin

Instructions

  1. Preheat oven to 350 degrees F (175 degrees C).
  2. Melt the butter in a saucepan over low heat, and cook the garlic until tender, about 5 minutes.
  3. In a shallow bowl, mix the bread crumbs, Parmesan cheese, Cheddar cheese, parsley, oregano, pepper, and salt.
  4. Dip each chicken breast in the garlic butter to coat, then press into the bread crumb mixture. Arrange the coated chicken breasts in a 9×13 inch baking dish. Drizzle with any remaining butter and top with any remaining bread crumb mixture.
  5. Bake 30 minutes in the preheated oven, or until chicken is no longer pink and juices run clear.

Liked this recipe, exchanged a few things, though. I made a mixture of 1/4 cup of ranch dressing and 1/3 cup mayonnaise instead of melted butter for the chicken dip. Instead of bread crumbs, I used wasa crisp bread, gluten free and added the garlic to the crumbs. The mayo ensured that the bread retained its moisture. I used packaged parmesian/romano instead and added to the mixture. It was so delicious, this is the way I will continue to make it!

My husband and 3 grown sons really loved this meal! It’s one they have asked me to make again, so that means it was good. Usually we’ll have some food left over, but not with this one.

Echo what others have said about a layer of breadcrumbs on the bottom of the pan and broil for 2 minutes before serving. Delicious!

Hubbie loved it, raved about it, wants it again. Next time I think I will add a dash of Cayenne to the breading, which, BTW, is enough that I put it together and then bagged half of it. There was enough for another casserole, which makes him very happy.

This was a huge hit in my house, our walmart didn’t have chicken breast halves so i bought normal chicken breast and cut them in half my self. I also baked it on a drip sheet so that it didn’t cook in its juices. it wasn’t as crispy as i wanted so I popped it in the broiler for a quick second and it made it PERFECT.

I’ve made this and this last time I put the ingredients in the blender to make all the ingredients finer so they would stick to the chicken, or fish better. instead of butter I use eggs. great and easy

It turned out great. I added a bit more seasoning but thats all the changes i made. One thing ill try next time is putting the oregano, parsley, pepper and salt directly onto the chicken instead of mixing it with the cheese/bread crumbs.

This is a family favorite & my 14 year old loves making it himself. We use panko breadcrumbs & broil at the end to get a nice crust, but otherwise we keep the recipe the same!

Awesome. After dipping it in the butter and the bread crumb mix, I dipped in egg and dipped it once again in the breadcrumb mix. Also cooked it for 45 minutes instead of 1/2 an hour and cut the breasts into 4 smaller pieces. It was a hit! Hubby loved it! said it was the best chicken I ever made. The house smelled so delicious! an added bonus.
