Ingredients

  1. 6 skinless, boneless chicken breast halves
  2. 1 tablespoon olive oil, divided
  3. ¼ teaspoon garlic salt
  4. 3 roma (plum) tomatoes, chopped
  5. ½ cup chopped fresh basil
  6. ¼ cup chopped green onions
  7. 2 cloves garlic, minced
  8. ½ teaspoon salt
  9. ⅛ teaspoon ground black pepper
  10. 1 tablespoon lemon juice
  11. ¼ cup grated Parmesan cheese
  12. 6 8×8-inch squares of heavy duty aluminum foil

Instructions

  1. Preheat an outdoor grill for medium-high heat, and lightly oil the grate.
  2. Place the chicken breast halves between two sheets of heavy plastic (resealable freezer bags work well) on a solid, level surface. Firmly pound the chicken with the smooth side of a meat mallet to a thickness of about 1/2 inch. Brush each chicken breast with olive oil, and sprinkle with a pinch of garlic salt.
  3. Grill the chicken breasts on the preheated grill until the meat is no longer pink inside and the chicken has good grill marks, 5 to 8 minutes per side. Move chicken to a cooler part of the grill to keep warm.
  4. While the chicken is cooking, mix together the tomatoes, basil, green onions, garlic, salt, black pepper, and lemon juice in a bowl.
  5. Place an 8-inch square piece of aluminum foil onto the grill, and move a cooked chicken breast onto the foil. Top the chicken breast with about 1/4 cup of the tomato mixture, and sprinkle the topping with about 2 teaspoons of Parmesan cheese. Repeat for the other pieces of chicken.
  6. Close the lid on the grill, and grill the chicken breasts until the topping is hot, 2 to 3 more minutes.

Great base and an inspiration to make it even more. To make it 5 stars, I used a little more spice to the chicken and then grilled it. I skipped the garlic salt and used a little Himalayan salt and ground pepper along with Herb de Provence. Once grilled (on an inside stove top grill), I added a little balsamic to the tomato basil topper. Then the parmesean… It was delicious!

This was amazing! I mostly stuck to the recipe, though I did do a Italian marinade because I was worried about the chicken being bland. Worked beautifully atop some angel hair pasta! Next time, might make a pesto sauce for the pasta though. All in all, a good recipe!

We really enjoyed how light and fresh this recipe was as a pasta dish. Even my picky son loved it. I added some onion powder, black pepper and oregano to the chicken in addition to the garlic salt and olive oil. Otherwise, I made it as stated.

I did marinate my chicken breast in Italian/teriyaki/garlic/Italian herbs for additional flavor. This was so easy, delicious and healthy. I added in some bell peppers I needed to use up, lots of Italian herbs to the veggie mix. Went well with a rice pilaf.

Oh wow, we loved this!! I used a combination of chopped yellow and red tomatoes. Also used purple basil 🙂 I forgot to put the foil under the chicken before loading on the topping so I lost some stuff 🙁 Lesson learned! Thanks Deborah!

The recipe is 5 stars as-is. DELICIOUS! I added a little bit of balsamic vinegar to the tomatoes and it pushed it over the top. SOOO good!!!

This was very good! I did not flatten the chicken or use the olive oil, but otherwise followed the recipe as stated. I may through in a few small croutons next time to give it a true bruschetta taste. My kids gobbled it up, too. I’m always looking for more ways to incorporate tomatoes since they love them.
