In a tomato-garlic sauce, boneless chicken and broccoli are a delectable combination. Use your preferred pasta shape; penne and shells are both suitable.

Ingredients

  1. 3 tablespoons olive oil
  2. 1 pound skinless, boneless chicken breast halves – cut into 1 inch pieces
  3. 1 tablespoon chopped onion
  4. 2 cloves garlic, chopped
  5. 2 (14.5 ounce) cans diced tomatoes
  6. 2 cups fresh broccoli florets
  7. salt and pepper to taste
  8. 1 pinch dried oregano
  9. 18 ounces dry penne pasta
  10. ¼ cup fresh basil leaves, cut into thin strips
  11. 2 tablespoons grated Parmesan cheese

Instructions

  1. In a large skillet over medium heat, warm oil and add chicken; cook until slightly brown. Add onion and garlic to cook for about 5 minutes or until garlic is golden and onions are translucent.
  2. Add tomatoes, broccoli, salt, pepper and oregano; stir well and bring to a boil. Cover and turn down heat to simmer for about 10 minutes.
  3. Meanwhile, bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until tender; drain and add back into pot. Pour chicken sauce into pot and mix well.
  4. Add basil and toss well; top with Parmesan cheese. Serve.

Absolutely delicious! My husband is super picky about what he eats and usually sticks to the same meals over and over again, and he loved it. He cleaned his plate. I would probably add a little tomato sauce with the diced onions if I were going to make it stretch a little further but other than that it was delicious.

Was really great and full of flavor. I used Angle Hair pasta instead of penne. Was ok but didn’t absorb mush of any juice from tomatoes. Still a great dish and will be using it again.

Ok…so i seasoned the chicken with a lil cajun seasoning,some Italian seasoning, garlic powder, and browned it in a mixture of olive oil and butter. Added chopped onion and garlic. I used roasted tomatoes and green chilies (rotel) and added a small amount of chicken broth…the smell was to die for…the taste was even better!! Paired it with garlic bread, and a glass of Riesling. BON APPETIT!

I added chicken broth as recommended by a previous reviewer and added the basil earlier. It tasted very good and was very easy to cook.

We changed this up a lot. I sautéed the garlic first then added in the chicken. The onion was added after the chicken completed. We added a cup of red wine, a lot of basil and oregano. Added in the diced tomatoes and broccoli and just let it simmer for 10-15 min. And then we added some red pepper flakes for a bit of a kick. We let it finish simmering and served it over rotini. Next time I think we will also add mushrooms.

I was greatly disappointed. This is what I consider a work in process. The recipe needed alot of work. I ended up following others suggestions and then some to enhance the flavor. Spices for one, salt & pepper for another. When all said & done, it turned out pretty good, my family thought so as well not knowing the lengths to make it so.
