Ingredients
- 12 ounces cheese tortellini
- 1/4 cup reserved pasta cooking liquid
- 2 tablespoons butter
- 2 cloves garlic, minced
- 1/4 pound proscuitto, sliced into thin strips
- 1 cup heavy cream
- 1/4 cup Parmesan
- 3/4 cup peas
- Salt and pepper
Instructions
- Cook tortellini according to package directions. Melt butter in skillet and cook garlic for 1 minute. Add Prosciutto and cook for 2 minutes. Add heavy cream and bring to a simmer. Cook until cream is reduced by half. Stir in 1/4 cup Parmesan and peas. Stir in reserved cooking liquid and tortellini and toss to coat.

Yummy! I made this the first time following the recipe exactly. It seemed a little too salty from the proscuitto. The second time I used the remainder of the meat (2 oz), which needed a bit more. For our tastes, 3 oz is perfect. Love the simplicity of the recipe.

Excellent sauce!!! Smooth, velvety, and easy to make. I can honestly say that it is a high end Italian restaurant quality. The only modification I made, was a bit less Parmesan cheese and heavy cream, and it was still Delicious oooo!!!!
This my husbands favorite dish. The quality is on par with any great Italian restaurant because it is a simple dish. The one adjustment I make is too reduce the amount of prosciutto, there was a bit too much for our taste. That said, I get lots of requests to make this from family and friends.
This recipe is so tasty & is real comfort food. So quick and easy. I actually tried this in a restaurant after having already made it prior. I must say that this recipe is better than the restaurant! It’s a real crowd pleaser and easy to get dinner on the table quickly. I always keep a bag of frozen tortellini & peas on hand along with a package of prosciutto for those times I have nothing to cook. Couldn’t be more simpler! Try it!
I put the frozen peas in the tortellini pot for the last 4 minutes of cooking, and only used 1/2 cup of heavy cream. It was a fast recipe and tasted fabulous!
Wonderful for Christmas Ham LeftOvers! We didn’t have prosciutto, used leftover ham. Used frozen peas, threw them in the last minute with the pasts. This was a great delicious dish!
Just finished cooking this. It tastes sooo good even with my modifications. I did as some other reviewers and made it my own by cleaning our my fridge with it. I used chopped red bell peppers, chopped red onion, asparagus, and since I did not have pancetta or prosciutto, I prepared thick sliced bacon lardons which I fried. This is an extremely forgiving and versatile recipe. AND it is simple and quick. Thank You!!!
I made this for our New Year’s Day dinner and loved it… I added some shallots, mushrooms and a touch of nutmeg. A very easy recipe to follow, serve it up with a light salad and garlic bread and you have a fabulous meal.
Oh my goodness…this was AMAZING!!! The only thing I did differently is I rendered the prosciutto to slightly crisp it up a bit. Double the recipe…3 of us downed this as a side dish and were sorry there were no leftovers!
