Ingredients
- ¼ cup olive oil
- 4 fresh tomatoes, diced
- 3 tablespoons chopped fresh basil
- 2 tablespoons chopped fresh oregano
- 6 artichoke hearts, drained and chopped
- 2 red bell peppers, chopped
- 1 (8 ounce) package mozzarella cheese, cubed
- 6 skinless, boneless chicken breast halves – pounded to 1/4 inch thickness
- 2 cups marinara sauce
Instructions
- Heat oil in a skillet over medium heat. Add tomatoes, basil, oregano, artichoke hearts and red peppers. Cook until just hot, then remove from heat. transfer to a large bowl and toss together with mozzarella cubes.
- Preheat oven to 350 degrees F (175 degrees C). Lay out the pounded breasts and spoon filling onto the center, leaving an inch on each side. Adjust filling as you roll so as not to over stuff. Place them seam side down into a 2 quart baking dish. cover with marinara sauce. Place lid onto dish or cover with aluminum foil.
- Bake for 35 to 45 minutes in the preheated oven, or until chicken is cooked through. You’ll love it!

This was a really good recipe. I didn’t have any peppers, but it was still really good. I will definitely make it again and maybe add some Kalamata olives..
Not a lot of flavor
I have made this recipe several times now and just love it. The artichokes give a wonderful flavor and the mozzarella is creamy and delicious. It also delivers a very tender chicken. I usually bake it for approx 40 minutes.
My husband is not too adventurous when it comes to new recipes, but he hasn’t stopped talking about this! I can’t wait to make it for company! I did use feta instead of mozzarella, sundried tomato (in oil) instead regular tomato, added some fresh spinach and omitted the marinara. Cut it into slices served it with some chicken flavored rice. I do agree with another review that it might be worth trying to brown it on the stovetop and then simmer with some chicken broth. May give that a try next. I love looking for new things to try and this one is a keeper!

I probably don’t need to tell any cook what a great sauce for pasta this makes, but it does! Of course that meant giving it all of its cooking time in the pan, then spooning it over prepared pasta. Loved it.

This was a while lot easier to make than I thought it was going to be! The chicken was nice and juicy. I did think the filling was a bit on the bland side, next time I will add some garlic and maybe a few other things to spice it up a bit. I also have lots of filling left over so will reduce that a bit next time.
Wow! Not to take away from your great dish as it is Maggie, but I did not have Mozz cheese in the fridge. I did have a bar of Goat Cheese though and I used that. It was a wonderful surprise and I felt I should share that tidbit. I made some whole grain Penne for the side and made great use of the excess sauce it created. Oh YES! we will indeed do this again.
Made this last night and it was a HIT with the fam-roasted the peppers and garlic–wow so yummy! Easy and delicious 😉
I don’t like artichokes but know how healthy they are for you. Loved them in this recipe.
Just had this. Excellent dish. The flavor that predominates is the fresh basil, now growing with a vengeance in my garden (Florida, so I’ll have it all year). I made pretty much the recipe amounts, but wound up with extra filling. That’ll go great with pasta. Thanks, Maggie!
this wasn’t bad but didn’t have nearly as much flavor as I thought it would have….was actaully a bit bland.
Fantastic recipe! My boyfriend and I tried it this weekend with a few adjustments based on other reviews, and we loved it. We added spinach, orange peppers, and used the shredded 4 cheese mix instead of just mozzarella cubed. We also decided to leave out the marinara sauce. This is definitely something we are adding to our cook book!
this is so flavorful and tasty, it’s almost hard to believe that it’s a home-cooked meal. i’ve made this numerous times and it’s in my repetoire for cooking, that rotation of 25 or so recipes that everyone has. great inventor !

Well, my husband enjoyed this recipe, but I wasn’t the biggest fan. It reminded me too much of a stuffed Parmesan chicken, which I don’t really care for.
This was alright, it’s a nice idea but it turned out pretty bland, which surprised me. Perhaps some garlic or something with some stronger flavor added to the filling would be helpful. I’ll definitely try again with some tweaking, thanks for the recipe!
