Cranberry Granita

Ingredients

  1. 2 cups cranberry juice
  2. 1/3 cup sugar
  3. 1/4 cup fresh lime juice
  4. 1/4 cup vodka
  5. 6 fresh cranberries, for garnish

Instructions

  1. Whisk the cranberry juice and sugar in a heavy medium saucepan over medium heat just until the sugar dissolves. Pour the cranberry mixture into a 13 by 9 by 2-inch glass baking dish. Cool completely. Whisk in the lime juice and vodka. Freeze until the granita becomes slushy, about 2 hours. Using fork, stir to blend. Continue freezing the granita until frozen, stirring every hour to form crystals, at least 5 hours or overnight.
  2. Divide the granita among 6 dessert glasses. Garnish with fresh cranberries, if desired, and serve.

Not too sweet, perfectly balanced between lime and cranberry flavors, my guests and I loved this recipe. We’re in the middle of a summer heatwave, nothing could have been easier or more refreshing. I’ve already used this recipe twice.

This was sooooo good! I used it as a palate cleanser during our seven course Christmas dinner and it was a huge hit. I served it on Chinese spoons with a mint leaf garnish – very seasonally appropriate and perfect flavor. I don’t usually review recipes but wanted to share since most other reviews talk about serving it on a hot summer day. It’s great for a snowy Michigan Christmas too!

I didn’t have any cranberry juice in the house. I did use a mixture of cran-rasberry and orange juice. While reaching for the vodka I picked up tequila
instead and by that time it was to late. I went ahead anyway. The outcome was just delicious and I don’t like tequila!! I didn’t want to wait for summer so I’m

If you want to make this for your kids or somwone who does not drink, use 7-up or sprite to replace the vodka. This is so refreshing. Yummmm! I loved it!

if you use straight cranberry juice with the lime and vodka its so sour, gross, and horrible aftertaste. It needs alot of sugar
