Amaretti Torta

Ingredients

  1. 20 amaretti cookies, plus 8 amaretti cookies crushed for topping
  2. 2 ounces semisweet chocolate chips (about 1/2 cup)
  3. 1 cup (2 sticks) unsalted butter, room temperature
  4. 1 cup sugar
  5. 5 large eggs, separated
  6. 2 tablespoons orange-flavored liquor (Triple Sec, Cointreau, or Grand Marnier)
  7. 1/2 cup all-purpose flour
  8. 1/4 cup orange marmalade

Instructions

  1. Preheat the oven to 350 degrees F. Grease a 10-inch cake pan and line the bottom with parchment paper.
  2. Combine the 20 amaretti cookies and the chocolate in a food processor. Run the machine until the mixture is very finely minced. Set aside.
  3. Using an electric mixer and a large bowl, cream together the butter and sugar until pale yellow, about 2 minutes. Add the egg yolks 1 at a time, incorporating each yolk before adding the next. Once all the eggs are added continue to cream the mixture together until light and fluffy, about 4 more minutes. Add the orange liqueur. With the machine on low, add the flour and the chocolate amaretti mixture. Mix well after each addition.
  4. In medium bowl whip the egg whites using an electric mixer until stiff peaks form, about 3 minutes. Add 1/3 of the whipped egg whites into the cake mixture until well combined. Gently fold in the remaining whipped egg whites. Pour the batter into the prepared cake pan. Bake until a toothpick comes out clean, about 45 to 50 minutes.
  5. Let the cake cool in the pan on a wire rack for 10 minutes. Turn the cake out onto a platter and continue to cool to room temperature. Top with the orange marmalade in an even layer. Sprinkle the remaining crushed amaretti cookies over the top of the cake. Slice and serve.

This recipe doens’t use baking powder. That’s rigth?

This recipe has the potential to be fantastic. However, the cookie measurement needs to be by weight rather than by number of cookies. I’ve made the recipe one time, with 25 Lazzaroni Amaretti cookies, and the batter was too dense, buttery and greasy. I will make the cake again with the same brand of Amaretti cookies, using the entire 7 ounces bag. Hopefully this will fill out the torta, making it lighter and more flavorful than the first cake. On the favorable side, the flavor combination of the given ingredients is marvelous, especially with homemade orange marmalade.

Family loved the cake. Husband said it’s now one of his favorite! Easy to make and would make it again for others. The texture is light and the flavor is unlike most cakes you’ve tasted. Amazing recipe!

A cake to die for. It has a unique texture due to the amaretti base, and a sophisticated, complex taste. For my personal preference, I used bittersweet chips (Ghirardelli and added 1 T of sugar. This might not be sweet enough for some people. I also added 2 T of cocoa powder to the flour, and 3 T milk to the wet ingredients. And, definitely, Grand Marnier. I mixed the flour/cocoa into the crushed amaretti/chips, and nothing sank. I only needed 4 amaretti for the topping.

A golden, glistening top, a perfect crumb, an intriguing aroma. An adult cake for a special occasion.

I have made this dessert several times for my family. Its a delightful surprise — the combination of flavors….Grand Marnier, amaretti cookies and chocolate go so nicely together! This cake was so delicious. My husband who has a huge sweet tooth and a picky sweet tooth, loved it too! He thought I was ruining it when I put the orange marmalade on top, but we both agree it is a real keeper! And I even had to change the recipe. I couldn’t find Amaretti cookies, so I used Biscotti cookies (the ones that are served on Delta Airlines) instead. Will definitely make alot and hopefully, will find Amaretti cookies and see what it tastes like with those!

The chocolate chips I tossed with flour to keep them from sinking to the bottom.

The cake was everything: moist, fluffy, and flavorful. The chocolate chips were a great addition. For me the chocolate chips fell to the bottom portion of the cake, but it ended up looking very appealing that way. The orange liquor was very light and did not have a strong flavor. Next time I may add more (?). As well, the orange marmalade was perfect for the top, it pulled the whole cake together. The flavor was amazing. You should definitely try it. Delicious.
