Ingredients
- 3 tablespoons canola oil
- 1 medium onion, finely diced
- 4 cloves garlic, minced
- One 1-inch thumb fresh ginger, peeled and minced
- 2 teaspoons ground coriander
- 1 teaspoon paprika
- 1/2 teaspoon store-bought or Homemade Garam Masala, recipe follows
- 1/2 teaspoon ground cumin
- 1/2 teaspoon cayenne, optional
- 1 pound ground beef
- 2 medium tomatoes, chopped
- Kosher salt and freshly ground black pepper
- 1 cup shucked fresh English peas or 1/2 cup frozen peas, thawed
- 2 teaspoons malt vinegar or apple cider vinegar
- 1/4 cup chopped fresh cilantro, plus a few extra leaves for garnish
- 4 chapatis or pitas, warmed
- 3 large cinnamon sticks (if you have the kind you get at Indian stores, it’s about 3 tablespoons of cinnamon bark bits)
- 3 tablespoons whole cloves
- 1/4 cup green cardamom pods, shelled, husks discarded (about 2 tablespoons of seeds)
- 4 large black cardamom pods, shelled, husks discarded (about 1 tablespoon of seeds), optional
Instructions
- In a large skillet, warm the oil over medium-high heat. Add the onions and cook until golden. Add the garlic and ginger, and saute for another minute. Stir in the coriander, paprika, Garam Masala, cumin and cayenne, if using and cook for 1 minute.
- Add the beef, breaking up lumps with a spoon, and saute until the meat is no longer pink. Add the tomatoes, 1 cup of water and season with salt and pepper. Sprinkle in the fresh English peas. Stir well and simmer, partially covered, about 10 minutes or if using frozen peas, add them now, and cook another 5 minutes, partially covered.
- Stir in the vinegar and chopped cilantro. Garnish with torn cilantro leaves and serve with warm chapatis or pita bread.
- Combine the cinnamon sticks, cloves, green cardamom seeds, black cardamom seeds, if using, in a spice grinder or coffee grinder and grind until fine. Store the spice mix in an airtight container away from direct sunlight.

Lots of interesting flavors.
Very good and flavorful! After reading reviews, I doubled the garam masala (store bought that I had on hand), did 6 garlic cloves, and made sure to salt properly. Got my onions nice and golden. This does take time but adds that layer of flavor. I used squeeze ginger from a tube, crushed coriander seeds to get the powder, added 1-2 tsp beef better than bouillon dissolved in 1c boiling water (so counted that as the 1c water), 2oz tomato paste vs using tomatoes since I didn’t have any, used 1tsp apple cider vinegar at the end vs 2tsp. Unfortunately, I was out of cilantro, which I love and usually have on hand so I’ll definitely use it next time. If you use lower fat ground beef, you shouldn’t need to rinse it and it won’t be greasy even slightly. I used a heaping half cup of frozen peas. Served this with jasmine rice (I was out of basmati).
My wife was not particularly fond of the tartness caused by the vinegar. I’ll eliminate that next time.
Easy. Served to a group with basmati, naan, and a vegetable curry. All enjoyed. I look forward to making it again.

Easy to make and tastes different than my usual fare. Yes, you may have to add more spice if that’s what you like. No big deal and corrects easily. Yes, it can be a little greasy depending on the grade of ground beef you use. Defat it. Again, it’s no big deal. My family loves it. I will make this again. You can make several Indian recipes and have multiple choices and a fantastic Indian feast.

Oh my gosh! This was sooo good! Please read the reviews below about the salt. This is not a bland dish. It is only bland if you don’t add enough salt!!
So perfectly balanced and easy to make! One of our favorite dishes to make going forward!
Made this for dinner last night and it was a hit. Only thing was that the water did not evaporate when I simmered for the time mentioned, so had to simmer for longer time.
Great recipe Love it, instead of peas I use butter beans works perfect.
