Ingredients

  1. 2 teaspoons olive oil
  2. 1 cup white basmati rice
  3. 1 medium onion, chopped
  4. 2 cups water
  5. 2 teaspoons salt
  6. 1/4 cup sliced apricots
  7. 2 tablespoons chopped currants
  8. 1/4 cup sliced almonds, toasted
  9. 2 tablespoons chopped cilantro leaves

Instructions

  1. Warm olive oil in a medium saucepan. Add rice and onion. Stir until rice is well coated and translucent around edges, about 2 minutes. Add water and salt. Stir, cover, reduce heat to low and cook 20 minutes. Remove from heat and let rest, covered, for 5 minutes. Fluff rice. Then gently mix in remaining ingredients.

Really lovely. Didn’t find currants, so went with dried cherries finely chopped. Worked beautifully.

Sooo flavorful! I had no hopes for this since 1) I had no currants, nor apricots & 2) I hate cilantro, so that’s out too.

So, I made it as directed (mind you I NEVER get a good “do” on rice) and at the end added the almonds and some dried cranberries..it had the best taste ever. Thanks Guy!

Very simple, easy & tasty. I will always cook my rice like this. Everyone enjoyed it. The only think I substituted was chicken broth for water.

This rice is very flavorful and delicious. The textures in the rice really kick it up from other recipes. I left out the dried apricots as I did not have any on hand and it was still very good!

I totally agree that this should be easy. If you can cook rice and sweat onion, then you’ve got this. I love all the contrasting flavors and textures. So good!

This recipe is very similar to one I have used for years. I let the onions brown a little longer before I add the rice, then throw in a pinch of cumin and tumeric with the rice. The rice turns a wonderful yellow colour and has loads of flavour from the spices.
