No-Churn Cherries ‘n’ Creme Ice Cream

Ingredients

  1. One 14-ounce can sweetened condensed milk
  2. 2 teaspoons pure vanilla extract or vanilla bean paste
  3. Pinch fine salt
  4. 2 cups heavy cream, cold
  5. One 16-ounce bag frozen dark sweet cherries, mashed

Instructions

  1. Whisk together the condensed milk, vanilla and salt in a large bowl; set aside.
  2. Whip the cream with a mixer on medium-high speed until firm peaks form, about 2 minutes. Fold about 1 cup of the whipped cream into the condensed milk mixture with a rubber spatula until combined, then fold the lightened mixture into the whipped cream until well blended. Fold in half of the mashed cherries. Pour into a chilled 9-by-5-by-3-inch metal loaf pan. Sprinkle the top with the remaining mashed cherries. Freeze, covered, until solid and scoopable, about 5 hours.

The first thing I noticed when reading the recipe is it calls for only 1 can of sweetened condensed milk, and the vid and when I watched it on TV clearly shows him pouring in two. Which is it?
Other than that will be adding whipped cream to my quick homemade ice cream recipe which just uses cream.

This is a review based on making with strawberries in stead of cherries. I loved the flavor of it… It tasted like old-fashioned strawberry ice cream. So creamy and rich. A bit sweet but strawberries helped to cut down the sweetness. I am excited to try different mix-ins next time!

Not a traditional ice cream texture, but refreshing and delicious. I did the base and added chocolate chips. Considering it only takes about 5 minutes of prep and can be made with items from the pantry, it’s a great recipe. I will definitely make it again and will throw in whatever nuts, chocolate, etc. I have on hand.

This turned out absolutely delicious!  I added a touch of almond extract and some chopped roasted salted almonds (from the bulk food aisle) to the cherry ice cream mixture before freezing.  Wonderful, thank you The Kitchen!
