Cherry-Chocolate Ice Cream

Ingredients

  1. 1 1/3 cups halved pitted cherries (about 13 ounces whole cherries)
  2. 1/2 cup plus 2 tablespoons sugar
  3. 1/2 cup dark rum (or water)
  4. 1 1/2 cups whole milk
  5. 4 large egg yolks
  6. 3 ounces semisweet chocolate, chopped
  7. 1 ounce unsweetened chocolate, chopped
  8. 1 tablespoon unsalted butter
  9. 3/4 cup heavy cream
  10. 1 1/2 teaspoons vanilla extract

Instructions

  1. Put the cherries, 2 tablespoons sugar and the rum in a medium saucepan and cook over medium-high heat until syrupy, about 20 minutes. Remove from the heat and let cool, then refrigerate until cold, at least 2 hours.
  2. Meanwhile, heat the milk and the remaining 1/2 cup sugar in a saucepan over medium-low heat, whisking to dissolve the sugar. Whisk the egg yolks in a small bowl. Gradually whisk about 1/2 cup of the warm milk mixture into the eggs, then whisk the egg mixture into the saucepan. Cook, stirring constantly, until the mixture coats a spoon and registers 168 degrees F on a candy thermometer, about 15 minutes. Remove from the heat; add the semisweet and unsweetened chocolate and the butter and set aside until the chocolate melts, about 5 minutes.
  3. Transfer the chocolate mixture to a blender and puree until smooth. Pour into a large bowl and stir in the heavy cream and vanilla. Refrigerate until chilled, at least 2 hours or overnight.
  4. Churn the chilled chocolate mixture in an ice cream maker. Strain the cherry mixture, reserving the syrup. When the ice cream is very thick, add the cherries and continue churning until incorporated. Transfer to a freezer-safe container. Drizzle in the reserved cherry syrup and swirl with a spoon. Cover and freeze until firm, at least 4 hours.

This ice cream is so good and deliciously smooth. Chocolate cherry ice cream is something I cannot find in a grocery store. I’m so happy I came across this recipe. This is my second time making it and it is so good!

Fabulous recipe! I make two small adjustments, however. Instead of mixing the chopped up chocolate directly into the hot custard mixture, put the chopped chocolate in a bowl, then pour the hot custard mixture through a fine wire mesh strainer as you add it the chopped chocolate. It makes the end result silky smoothe and strains out any errant custard chunks before it goes into the blender. Also, at the very end of the ice cream cycle when I add in the cherries, I add about 1/3 cup of coursely chopped dark chocolate (Hershey special dark). Let it mix in just long enough to be evenly distributed so that the cherries and chocolate chunks don’t get mashed.

FYI, If you add eggs, you’re not making Ice Cream, you’re making frozen custard.

This is delicious, one of my favorite ice cream recipes I’ve made! The texture was awesome and it keeps great in the freezer. The cherries balance out the rich chocolate flavor nicely, will make again!

My boyfriend’s favorite ice cream is a limited edition Ben & Jerry’s flavor – Chocolate Cherry Garcia. That ice cream haunted him for almost 4 years… until I found this recipe, which he said was 10x better!! Rich, creamy – best chocolate ice cream I’ve ever had, for sure. I added a little extra of the syrup into the ice cream as it was churning for extra flavor. This ice cream keeps for a bit, too!! Delicious!!

good stuff…just FYI…if you chopped the chocolate small enuff and  whisk it into the hot milk mixture then you don’t have to break out the blender…needless step

This is the best ice cream I have ever made! Very rich and chocolatey, and the cherry flavor was great. Usually when I make homemade ice cream it turns rock hard in the freezer, but this was perfect!
