Sweet Potato Hummus

Ingredients

  1. 1 medium sweet potato (about 12 ounces)
  2. 1/3 cup olive oil, plus more for serving
  3. 2 cloves garlic, smashed and peeled
  4. 1 cup canned chickpeas, drained
  5. 1/4 cup toasted almond butter
  6. 1 tablespoon lemon juice
  7. 2 teaspoons kosher salt
  8. 1/2 teaspoon za’atar
  9. Pita chips, for serving

Instructions

  1. Preheat the oven to 400 degrees F.
  2. Place the sweet potato on a rimmed baking sheet and pierce it a few times with the tip of a knife. Bake the sweet potato until tender all the way through, about 1 hour. Allow to cool slightly.
  3. In a small skillet over low heat, warm the oil and garlic until the garlic is lightly browned and soft, about 10 minutes. Set aside to cool.
  4. In the bowl of a food processor, add the cooled oil and garlic, chickpeas, almond butter, lemon juice and salt and puree until smooth. Scoop the flesh of the sweet potato into the processor and puree again until combined and smooth, adding 1 to 2 tablespoons water if needed. Remove the hummus to a bowl and stir in the za’atar, leaving a little swirl. Serve drizzled with olive oil alongside pita chips as desired.

I love this hummus recipe. Sometime the flavor of tahini is too overpowering. The almond butter is a genius addition and a delicious compliment to sweet potato.

Everyone liked. I would half the salt as it was a bit too salty so I had to add more chickpeas to even it out.

If you like hummus, this is a must try.  So delicious.  At the end, she recommends adding a tablespoon or 2 of water if it’s too thick.  Save a couple tablespoons of the hummus liquid for that purpose:)

Love this! I always have homemade hummus in my fridge and am willing to try something a little different every once in a while. This has a little sweetness from sweet potatoes yet the garlic gives such a savory kick.

Wow! SOOOO good! Cooking the garlic really brings out the flavor. I didn’t have any za’atar so just use a small amount of smoked paprika. Will definitely make this again!

Delicious! Never tried Za’atar before. I’m a new convert and look forward to using it again. I also thought the almond butter was a nice change from tahini, which can be bitter.

Oh, my, sooo good! Made a double batch, 4 cups, glad I did! Had a hard time finding toasted almond butter until I looked at a jar of Creamy Almond Butter and saw dry roasted almonds as the main ingredient,
and sea salt. Yummy!
