Ingredients
- Two 15-ounce cans chickpeas, drained and rinsed
- 1/2 cup roasted red peppers (jarred in water or oil both work)
- 3 tablespoons tahini
- 1 clove garlic, chopped
- 3 to 4 tablespoons lemon juice
- Kosher salt
- 1/4 cup olive oil
- Pita chips, celery and carrot sticks and halved radishes, for serving

Instructions
- In a food processor, combine the chickpeas, roasted red peppers, tahini, garlic, lemon juice and 1 teaspoon salt. Pulse a few times to chop up the chickpeas. With the motor running, pour in the olive oil and process until a smooth paste forms. Transfer to a serving bowl and serve with pita chips, celery sticks, carrots sticks and radishes.

This was really good. I made it for an appetizer before the Thanksgiving feast and it was a hit!
This makes the best hummus. I’ve made it several times and have done some variations. I have topped it with a swirl of chili garlic sauce. I’ve topped it with sundried tomato pesto. My favorite so far to top it with a thin layer of good olive oil and halved, mixed olives.

I loved how simple it was but it was a little bland for me. I added a 1/2t cayenne pepper and 1/4t cumin. Perfect and delish! Thank you Valerie!

FAR too much salt. I had to add another can of garbanzo beans to tone it down. Next time I’ll add no more than 1/2 teaspoon total and may start with increments of 1/4 teaspoon.
