Ingredients

  1. 1 Tbsp. olive oil
  2. 1 cup chopped red onion
  3. 1 jalapeno pepper, seeded, finely chopped
  4. 1 can (15 oz.) black beans, rinsed
  5. 1/4 cup cilantro
  6. 1 tsp. lime zest
  7. 2 Tbsp. fresh lime juice
  8. 1/2 tsp. hot pepper sauce
  9. 72 RITZ Crackers
  10. 1/2 cup BREAKSTONE’S or KNUDSEN Sour Cream
  11. 1/2 cup finely chopped red peppers
  12. 1/2 cup finely chopped avocados

Instructions

  1. HEAT oil in small skillet on medium heat. Add onions and jalapenos; cook and stir 5 min. or until crisp-tender. Cool slightly.
  2. TRANSFER onion mixture to blender. Add next 5 ingredients; blend until smooth.
  3. TOP crackers with bean mixture, sour cream, red peppers and avocados. Serve immediately.
