Black Bean Hummus

Ingredients

  1. 1 cup cooked black beans
  2. 1 garlic clove, minced
  3. 2 tablespoons olive oil
  4. 2 tablespoons lemon juice
  5. 1 tablespoon white wine vinegar
  6. 1/2 teaspoon ground cumin
  7. Kosher salt and freshly ground black pepper
  8. 1/2 head iceberg lettuce, cut into wedges

Instructions

  1. Blend all the ingredients, except the lettuce, in a food processor until almost smooth. Let sit for 15 minutes before serving with iceberg lettuce wedges.

Easy to make and pretty tasty. I’m not a fan of raw garlic so I omitted that and added a bit of smoked paprika. Other than, made as written. I will make it again.

I stood starring at my pantry for a out 5 minutes, trying to figure out lunch. I grabbed a can of black beans, searched the site and the rest is history! I followed some of the reviews and used the cooked liquid instead of vinegar and modified the spices – extra garlic, extra cumin, added cayenne, and a little dried oregano.

I ate it with pita chips and carrots. It was simple to make and delicious to eat!

I riffed on this based on the reviews.  Skipped the vinegar.  Used all the liquid drained from the can of beans.  God only knows how much garlic & cumin & a mix of lemon & lime I used.  Worst coloured food I’ve ever made (including wheat grass watermelon smoothie! LOL!).  TASTES GREAT!

Used only 1Tbs of lemon juice, 3 -4 larger pieces of pickled jalapenos. makes a great bean dip for veggies…yummm

I thought this was okay as a dip for veggies, but as compared to other recipes we have it is a bit too lemony-tart.

I followed the recipe exactly.  I love the flavor, but not the consistency.  I tried adding extra beans, but that didn’t help.  Bean dip?  Yes.  Hummus? Nope, nope, nope!
