Pigs in a Blanket with Curried “Ketchup”

Ingredients

  1. 1 puff pastry sheet, thawed
  2. 6 all-beef hot dogs
  3. 1/4 cup heavy cream
  4. 3 tablespoons grated Romano
  5. 1 tablespoon poppy seeds
  6. 1 pint cherry tomatoes
  7. 1/2 cup red wine vinegar
  8. 1/4 cup sugar
  9. 2 teaspoons curry powder
  10. 1 teaspoon salt
  11. 1/4 teaspoon pepper
  12. Pinch ground cloves

Instructions

  1. Preheat the oven to 400 degrees F.
  2. Cut the pastry into 6 equal strips and cut each strip into 3 pieces. Cut the hot dogs into 3 equal pieces. Place 1 hot dog piece onto a piece of the pastry and roll until the pastry meets itself. Press gently to seal. Place on a baking sheet. Repeat with the remaining hot dogs and pastry. Brush the pastry tops with the cream and sprinkle half with the cheese and half with the poppy seeds. Place in the top half of the oven until the pastry is puffed and golden, about 15 to 18 minutes. Remove, let cool 5 minutes, and serve with the dipping sauce on the side.
  3. Put the tomatoes, vinegar, sugar, curry powder, salt, pepper and cloves into a saucepan and place over high heat. Bring to a boil, stir to dissolve the sugar and cook until the tomatoes have broken down and the mixture is slightly thick, about 10 minutes. Pour the mix into a food processor and pulse until smooth. Let cool to room temperature before refrigerating. Place in a decorative bowl to serve.

I took this to a pot luck…and every other plate stood about half empty, and my pigs in a blanket flew off the plate within 10 minutes! I don’t think I’ll ever eat bottled ketchup again. The curried ketchup is fabulous, fresh and oh-so-tasty!!! Puff pastry hot dog “buns” are genius! The recipe made waaaaaaay too much ketchup, and I’m thrilled to have it in my fridge for the future! Five forks!

This recipe is super duper tasty. I ate way more pigs than I should of! I loved the curried ketchup and have made this recipe several times since then. I add onion powder, garlic powder, and chili powder to the mixture for extra bite. The pigs in the blanket were extraordinary, and I used fancy hotdogs (hilshire farm’s spicy or flavored) to add more of a gourmet touch. This recipe is so economical and easy that it is a party foods first choice everytime!
