Ingredients
- 1 1/2 pounds medium carrots (about 12 carrots), halved lengthwise with the green tops still on
- 3 tablespoons unsalted butter
- 3 tablespoons dark brown sugar
- 2 tablespoons honey
- 3 tablespoons chopped fresh mint leaves, plus more for garnish
- 1/2 teaspoon kosher salt
- 1/4 teaspoon freshly ground black pepper
Instructions
- Preheat the oven to 400 degrees F. Line a baking sheet with parchment paper. Place the carrots on the baking sheet.
- In a small saucepan, melt the butter over medium heat. When the butter has melted, remove the pan from the heat. Add the brown sugar and honey, and stir to combine.
- Pour the butter mixture over the carrots. Sprinkle with the mint, salt and pepper. Toss to combine. Roast the carrots until tender and lightly golden, 20 to 25 minutes. Transfer to a platter and garnish with fresh mint.

Excellent! I recommend this recipe wholeheartedly. In fact, I often do a half-carrots/half-asparagus combo with this. Exquisite!
OMG this was SO GOOD!!! You could put this sauce on shoe leather and I would eat it. I think it’s the honey that makes it so good. It was too hot to turn on the oven so I did it in a saute pan and it turned out fantastic.
Yuck…. way too sweet. Just like every other carrot recipe where you pour some form of sugar over the top
I have had lackluster results making carrots taste good, but this is my fave so far, and effortless. I bump the temp up to 425/450 and turn them over halfway thru. The oven does the rest.
The colored carrots are somewhat hard to find, but even with regular carrots, it was easy and delicious.
Made these to go with our Easter dinner. People said it was their favorite dish. I didn’t have mint, but I don’t think it was needed.
I fixed this for Easter dinner to go with the ham my daughter in law fixed. It was a big hit
