Mini Pistachio Baklavas

Ingredients

  1. One 1.9-ounce box frozen mini phyllo shells (15 mini tart shells), baked according to package directions
  2. 3 tablespoons unsalted butter
  3. 1 cup raw unsalted pistachios
  4. 3 tablespoons honey
  5. 2 tablespoons sugar
  6. 1/2 teaspoon ground cinnamon
  7. 1/8 teaspoon kosher salt

Instructions

  1. Lay the phyllo tart shells out on a serving platter.
  2. Melt the butter in a medium skillet over medium heat. Add the pistachios and toast in the butter, stirring, until they have a nutty aroma, about 2 minutes. Add the honey, sugar, cinnamon and salt and cook, stirring, until thick and bubbling, 1 to 2 minutes.
  3. Use two small spoons to scoop the pistachio filling into the shells. Cool to room temperature before serving.

These are really great. Everyone loved them. Super easy to make. I chopped up the pistachios a little bit and when I was running low on my third batch I added pecans. Gave them in treat boxes for Christmas and took them to all dinners.

I couldn’t find phyllo so i used puff Pastries and they worked perfectly. My husband actually asks me to make these versus his regular snickerdoodles. I was cheap and used shelled roasted lightly salted pistachios and they came out delicious!

I thought the reviewer that said you might break a tooth on these might have cooked them too long. I followed the recipe and had the exact same problem. I love the concept of these little bite size treats that are salty and sweet…just not sure how to make the filling softer.

They were delicious. However, you must serve them right away. Otherwise, you could break a tooth. They were very hard. I brought them to a Friendsgiving and they were not a hit. They needed to be heated in the microwave. Disappointing!
