Ingredients
- 2 bunches baby carrots, peeled
- 2 tablespoons olive oil
- 2 tablespoons honey
- 1 1/2 teaspoons kosher salt
- 1 teaspoon freshly ground black pepper
- 1 tablespoon soy sauce
- 2 teaspoons black sesame seeds
- 1 tablespoon chopped parsley
Instructions
- Preheat the oven to 450 degrees F. Line a baking sheet with foil and put in the oven to heat.
- Spread the carrots in a single layer on the hot baking sheet. Combine the olive oil and 1 tablespoon of honey in small bowl and pour over the carrots. Sprinkle with the salt and pepper. Roast the carrots start until they start to blister, 10 minutes.
- Mix together the remaining 1 tablespoon honey and the soy sauce. Drizzle the mixture over the hot carrots and toss to coat. Sprinkle with the sesame seeds and chopped parsley and serve.

Simple and delicious. My family loved this!
Easy and tasty – soy was a nice variation to the usual. I used larger baby carrots (in a bag) and roasted in top third of oven for 15 minutes, then turned on broiler for another 5. I also added 1/4 tsp sesame oil to the soy sauce mixture to enhance the sesame flavor.
