Quick and Easy Spaghetti with Marinara Sauce

Ingredients

  1. Kosher salt and freshly ground black pepper
  2. 1 pound spaghetti
  3. One 32-ounce can whole peeled plum tomatoes
  4. 3 garlic cloves
  5. 1/4 cup extra-virgin olive oil
  6. Grated Parmesan, for serving

Instructions

  1. Bring a large pot of salted water to a boil. Add the spaghetti and cook according to package directions and then drain.
  2. While the pasta is cooking, puree the tomatoes with their juice in a blender with the garlic cloves, 1 teaspoon salt, and a few grinds of pepper.
  3. Heat the oil in a large heavy skillet over medium-high heat. Careful of it splashing, pour the tomato puree into the hot oil and cook, stirring occasionally, until slightly thickened, about 5 minutes. Add the cooked pasta to the sauce and toss until coated. Season with salt and pepper. Serve with grated Parmesan.

Very basic and easy..But good!- I added 1 teaspoon fresh ( shredded) basil and a few mushrooms (sliced) I had lingering in my fridge..
