Strawberry Oatmeal Bars

Ingredients

  1. 2 sticks (1 cup) salted butter, cut into pieces, plus more for greasing pan
  2. 1 1/2 cups all-purpose flour
  3. 1 1/2 cup oats
  4. 1 cup packed brown sugar
  5. 1 teaspoon baking powder
  6. 1/2 teaspoon salt
  7. One 10 to 12-ounce jar strawberry preserves

Instructions

  1. Preheat the oven to 350 degrees F. Butter a 9-by-13-inch rectangular pan.
  2. Mix together the butter, flour, oats, brown sugar, baking powder and salt. Press half the oat mixture into the prepared pan. Spread with the strawberry preserves. Sprinkle the other half of the oat mixture over the top and pat lightly. Bake until light brown, 30 to 40 minutes. Let cool completely, and then cut into squares.

These are delish!! I only used about 3/4 cup of brown sugar after reading other foodies’ comments which I appreciate. The taste is amazing and so is the moistness!!! They were a little crumbly so I separated them into cupcake liners and refrigerated them. That helped. I ended up with a really pretty, kinda fancy snack or breakfast with milk or coffee!!

I’m rating this as a four-star because the taste is outstanding, but the bars stayed too soft to hold so we ate it with a fork, hence why I’m not leaving it as a five-star. This confuses me because I did everything, aside from doing half of the sugar amount, just like several other people that reviewed did, and I ended up mixing strawberry and raspberry jam together because I didn’t have enough of either one. I let it bake for a few minutes longer because it wasn’t brown enough on top. It seemed there was too much butter to allow it to firm up, IMO.

Wow these were sweet. Even taking one bite was way too much. I could see these could be good, but probably have to cut the sugar down to 1/3 cup instead of 1 cup

Made some substitutions as suggested by some other reviewers: 1/2 cup brown sugar and 3/4 cups butter. Still very sweet! A little crumbly (maybe because of the less butter). Would definitely try with other types of preserves!

I followed another reviewer’s advice and only used 1/2 c brown sugar. That was absolutely sufficient given the sweetness of the fruit filling. Also, a smaller dish might be better to give a thicker bar.
