Spicy Rosemary Nuts

Ingredients

  1. Vegetable oil cooking spray
  2. 1 large egg white
  3. 1/2 teaspoon kosher salt
  4. 2 tablespoons maple syrup
  5. 1 tablespoon dried rosemary
  6. 1/4 teaspoon cayenne pepper
  7. 2 cups raw cashew nuts
  8. 1 cup raw shelled sunflower seeds

Instructions

  1. Preheat the oven to 350 degrees F. Spray a heavy baking sheet with vegetable oil cooking spray.
  2. In a medium bowl, whisk the egg white and salt just until foamy. Add the maple syrup, rosemary and cayenne pepper. Stir in the nuts and sunflower seeds and toss until coated.
  3. Spread the nut mixture on the prepared baking sheet in a single layer. Bake until the nuts are crisp and brown, 20 to 25 minutes, stirring halfway through. Let cool before serving or storing.

I agree these weren’t salty enough. In fact a little bland. Not enough flavor.

This is a versatile recipe that is easily adaptable and easy to make. I used almonds and pistachios because that’s what I had on hand. My only suggestion is to increase the amount of salt, as 1/2 tsp doesn’t seem to be quite enough. I happen to like my nuts a tad bit saltier than what this recipe produces. But to each their own! And, if you like things spicy, definitely don’t be afraid to add more cayenne as Giada suggests!

These are amazing! The perfect healthy snack or holiday gift (people love them!). I follow the recipe exactly and they are always a hit. I like them the best when they start to get Brown in color

This was not good.  I baked for 20 minutes and the sunt flower sees and a lot of the nuts were stuck together because of the egg white.  I took them out of the oven and let them cool.  Dry as can be and the sunflower seeds practically disintegrated.  The nuts would be better roasting with oil.  I wasted sunflower seeds and nuts on this one.  If there was 1/2 star that would be my rating.
