Ingredients

  1. 2 cups old-fashioned rolled oats
  2. 1 cup extra-crunchy peanut butter
  3. 1/2 cup raw honey
  4. 1/2 cup mini chocolate chips
  5. 1/2 cup dried cranberries
  6. 1/2 cup sunflower seeds
  7. 2 tablespoons flax seed

Instructions

  1. In a food processor, pulse the oats, peanut butter, honey, chocolate chips, cranberries, sunflower seeds and flax seeds until fully combined. Cover and refrigerate for 30 minutes.
  2. Line a baking sheet with waxed paper. Form balls from the mixture (about 1 1/2 tablespoons each) and place them on the baking sheet. Refrigerate for 30 minutes before serving.

I made this recipe for the first time a few weeks ago. I looked right past the part about pulsing some of the ingredients in the food processor. No matter, they were delicious and had lots of texture!

My daughter in law gave me a copy of this recipe some time ago. They were delicious. I dug out the recipe again to add the ingredients to my shopping list. These will, again, be part of my husband and my lunch snack along with our bottle of Boost. We’re in our 90’s so don’t eat a lot of lunch.

I made these for my sister when she was going through radiation therapy for breast cancer. I would bring her 4 to munch on when I picked her up from the hospital and drove her to work. I make them exactly as written, however I don’t pulse the cranberries and chocolate chips. She liked getting a bite of them, sweet and tart, together. So I just stir them in before rolling.
You totally can use other dried fruits, other seeds or grains. I like rolling them in toasted wheat germ or chia seeds at the end.

These taste a lot like Costco’s Aussie Bites. I made the recipe with pumpkin seeds instead of sunflower. Also mixed the cranberries with dates. A little bit more peanut butter and honey for form. And added a little vanilla and cardamom powder. Wonderful!

These are a winner in my book. I am eating healthier the older I get. I substituted almond butter and Reeses peanut butter chips since I’m allergic to chocolate. Still a great healthy snack. Never thought about freezing them . Good idea. Will try that next time.

Love this recipe. I travel a lot for work, and these are always with me. I usually add chia seeds and almonds for an extra crunch. If you are like me and go a little overboard on the dry ingredients, add a few table spoon of water, they will still form up and hold their shape fine!
