Aztec Fruit Bars

Ingredients

  1. Nonstick cooking spray, for spraying foil
  2. 1/3 cup all-purpose flour
  3. 2 teaspoons ancho chile powder
  4. 1/4 teaspoon salt
  5. 1/8 teaspoon baking powder
  6. 1/8 teaspoon baking soda
  7. 1 cup raw almonds, chopped
  8. 3/4 cup dried apricots, cut into quarters
  9. 1/2 cup chopped bittersweet chocolate
  10. 1/2 cup dried cranberries
  11. 1/2 cup dates, pitted and cut into quarters
  12. 1/2 cup dried figs, cut into quarters
  13. 1/3 cup light brown sugar
  14. 1/4 cup popped amaranth
  15. 1 tablespoon honey
  16. 1/2 teaspoon vanilla extract
  17. 1 large egg

Instructions

  1. Position an oven rack in the center of the oven and preheat to 325 degrees F. Prepare an 8-by-8-inch square baking pan by lining it with aluminum foil and spraying the foil with nonstick cooking spray.
  2. In a large bowl, whisk together the flour, ancho chile powder, salt, baking powder and baking soda. Stir in the almond, apricots, chocolate, cranberries, dates, figs, brown sugar and popped amaranth. Use your fingers to make sure that everything has been coated with the flour mixture evenly.
  3. In a separate bowl, using a stand mixer with a whisk attachment, beat the honey, vanilla and egg until thick in texture, about 1 minute. Add the egg mixture to the fruit and flour mixture and mix using a spatula until everything is coated with the egg mixture. Spread onto the prepared baking pan, pressing to even out.
  4. Bake until the batter is golden brown and can pull away from the sides of the pan, about 30 minutes. Let cool before cutting.
  5. Lift the bar from the pan by the edges of the aluminum foil. Use a sharp knife to cut into 16 even squares.

Not great.  Very gooey, but don’t hold together very well.  I guess I am still on the hunt for a tasty “healthy” make-at-home snack bar recipe.

I was excited when watching these but once I made them and ate them I liked them but I didn’t love them.. I only ate a little piece and was over them.. I think its such a good idea but I wasn’t crazy about them.. too costly in all the dried fruit and too sticky.. too bad!

So very good! The only ingredient I changed was the cranberry for raisins. Getting ready to make it for the second time. Very tasty and such a healthy fruit bar. Thank you!

These were good. I used flax meal in with the flour instead to amaranth. I used the special dark Hershey chips just to for ease. I also did half almonds and half walnuts. Very good base recipe to sub in what you like.
