Ingredients
- 1 mango, peeled and diced
- 1/2 cup peeled, diced cucumber
- 1 tablespoon finely chopped jalapeno
- 1/3 cup diced red onion
- 1 tablespoon lime juice
- 1/3 cup roughly chopped cilantro leaves
- Salt and pepper
Instructions
- Combine the mango, cucumber, jalapeno, red onion, lime juice and cilantro leaves and mix well. Season with salt and pepper, to taste.

Delicious and simple! The perfect acidity to accompany the barbacoa tacos I made for dinner.
This was delicious. I like spicy salsa, so I doubled the jalapeño. I also had a ripe avocado hanging around which I diced and tossed in with everything.
Delish! When I make this,I double or triple. Kids love it too. The mango and cucumber stop the heat of the jalapeño.

This salsa is delicious. I loved the addition of cucumbers instead of bell peppers like in many other recipes out there. I’ve made this salsa with mangos, but also substituted peaches when they are in season here in Fredericksburg, TX (best peaches in the country!). I love this salsa served in tacos with grilled mahi mahi, pickled cabbage and a lime crema sauce.
Made this on a 90 degree day to serve with some grilled mahi mahi filets. It was outstanding. It was reminiscent of a dish served at Duke’s on Waikiki we had a few years ago! (sigh). And the best part is it’s even better the next day. Thanks, Ellie!

I was heavy handed with the peppers so I added canned peaches, drained, and it worked. I anticipate this will be so good with my Jamaican meat pies today. I believe it’d go great with bean burgers too…as well as fish and seafood dishes as mentioned.
