Grilled Chicken Tacos with Tomatillos and Queso Fresco

Ingredients

  1. 1/4 cup fresh lime juice
  2. 2 garlic cloves, sliced
  3. 1 chipotle chile in adobo, coarsely chopped
  4. Kosher salt
  5. 2 large boneless, skinless chicken breasts, cut into 1-inch pieces (1 pound)
  6. Nonstick cooking spray
  7. 4 (8-inch) flour tortillas
  8. 1 pound tomatillos, removed from husk and rinsed
  9. 1 tablespoon olive oil
  10. 2 cups shredded romaine lettuce
  11. 2 ounces queso fresco, crumbled, about 1/3 cup
  12. Chopped onion, cilantro sprigs, and lime wedges for serving

Instructions

  1. Combine the lime juice, garlic and chipotle chile in a medium nonreactive bowl; season with salt. Add the chicken, toss well to coat, and refrigerate 2 hours. Remove the chicken from the marinade; thread onto 4 (12-inch) skewers lightly misted with cooking spray.
  2. Preheat the grill to medium. Mist the tortillas with cooking spray. Add the tortillas to the grill; cook, turning once, until lightly toasted, about 1 to 2 minutes per tortilla.
  3. Meanwhile, add the chicken and the whole tomatillos to the grill; cook, turning often, until tomatillos are charred and chicken is cooked through, 4 to 6 minutes. Remove the skewers from the chicken.
  4. Coarsely chop the tomatillos and toss with oil and salt to taste. Place toasted tortillas on plates; generously top with romaine, tomatillos, chicken, and queso fresco. Serve with onion, cilantro sprigs, and a lime wedge if desired.

Pretty darn tasty and healthy.  I made with grilled corn.  I also added radishes, avacados and green onions.  My picky 16yo really liked this. I will for sure make again.

Couldn’t grill outside so I made on the stove using a grill pan. Didn’t work so well with the tomatillos but did the job for the chicken. Regardless, the meal turned out tasty!! The marinade was smoky but the lime and garlic was a great combination so I don’t know how others thought it was too smoky. The flavor in the chicken was on point and the tomatillo sauce with the queso fresco was so good. I added some fresh minced jalapeno and avocado, so yummy!!!

This recipe was really fulling and good. The chicken marinade was a little too smokey for my taste but when mixed in with the queso fresco and tomatillos! It was delicious! The queso fresco went so perfect with the dish, it really made it. It was really fulling and good, very yummy!

This recipe was so good!! I loved the smoky flavor the marinade and grill combo made. I had never tried tomatillos before this and I was pleasantly surprised they offered some great flavor. I love vegetables so I used spinach instead of romaine and added sliced radishes, tomatoes and avocado sprinkled with some tapitio, Yummy. also I didn’t purchase queso fresco I just used goat cheese. regardless this was a great recipe!

Delish! Some of the reviews said they were bland and lacking flavor so I was a bit skeptical. I thought they were bursting with flavor. I have never used tomatillos before and didn’t know what to expect. I only marinated the chicken for about 20 min. because I realized this step too late, I don’t think it made much of a difference. So good! I used corn tortillas because I already had them. I also cooked everything on the stove on a grill pan and I skipped the skewers… time consuming and pointless on the stove.

Husband said it was one of his favorites!! Was a HUGE hit with the family! I even used a strip steak in addition to the chicken… and it was just as good, if not better! I also charred some jalapenos on the grill to add some heat! Will be doing this one again and again!! So easy!!

I loved this recipe and so did my family. My teenage daughter said wow that was awesome and we all know we don’t hear that much!! I did add my own flare by creating my own avocado tomato salsa. Really brought all the favors together. Yum yum! Will definitely make it again.
