Classic Coleslaw with Caraway

Ingredients

  1. 1/2 cup nonfat Greek-style yogurt, or 2/3 cup regular plain nonfat yogurt
  2. 1/4 cup mayonnaise
  3. 1/4 cup apple cider vinegar
  4. 1 tablespoon honey
  5. 1/2 teaspoon salt
  6. 1/4 teaspoon pepper
  7. 1 (16-ounce) bag shredded coleslaw mix
  8. 2 teaspoons caraway seeds

Instructions

  1. If using regular yogurt, place it in a strainer lined with a paper towel and set the strainer over a bowl. Let the yogurt drain and thicken for 20 minutes. In a large bowl whisk together the Greek or stained yogurt, mayonnaise, vinegar, sugar, salt and pepper. Add coleslaw mix and caraway seeds and toss to coat. 
  2. Excellent source of: Vitamin A and Vitamin C.

My only complaint is the name. You cannot call this a classic coleslaw when using Greek yogurt!

This is a very good basic cole slaw. But would be vastly improved if you toast the caraway seeds .

I used white balsamic vinegar instead of apple cider and less than 1/4 based on previous comments and also dry dill weed as I didn’t have caraway seeds… it was delicious!

This was really good. I would use a little less vinegar. I didn’t use caraway seeds. I think I’ll try celery seed next time instead.

I cut the vinegar in 1/2 because it was too runny. Also used celery seed instead of caraway seed. Very good recipe.

This recipe is pretty decent. I don’t necessarily like the way it tastes on its own, however, I put it on pulled pork sandwiches and it compliments the pork very well. For me on its own, it slightly lacks in flavor.

This is a great recipe! It’s easy to make. I also made the BBQ pulled chicken sandwiches (Ellie’s recipe to go with the slaw. My husband & I love it! He did not know that it contained yogurt. If I told him that he would not have eaten it! We actually put some of the slaw right onto the sandwich! You gotta try this if you like coleslaw!

Used the coleslaw dressing recipe as I had some greek yogurt and half a head of Napa cabbage to use. Since I’ve always loved caraway with raw cabbage, cooked cabbage, and kraut, I figured this recipe would work; it did.

The brightness of the yogurt transforms this slaw from the over rich, oversweet stuff we usually get served here in the deep south.
