Ingredients
- 1 cup French lentils
- 2 cups water
- 2 tablespoons olive oil
- 2 tablespoons diced shallots
- 3 cups baby spinach leaves (about 3 ounces)
- 1 cup halved grape tomatoes (about 1/2 pint)
- 1/4 cup chopped fresh basil leaves
- 1/4 cup chopped fresh flat-leaf parsley
- 1/4 cup chopped fresh mint leaves
- 2 tablespoons fresh lemon juice
- 1/2 teaspoon salt
- 1/4 teaspoon freshly ground black pepper
Instructions
- Place the lentils in a pot with the water and bring to a boil. Cover and simmer for 30-35 minutes, until the lentils are tender but still retain their shape. Drain any excess water from the lentils and set them aside.
- Heat the olive oil in a large skillet over a medium-high heat. Add the shallots and cook until they are softened, about 3 minutes. Add the spinach and cook until just wilted, about 2 minutes. Add the tomatoes, lentils, basil, parsley, and mint to the pan and stir to combine. Cook until warmed through, about 1 minute. Stir in the lemon juice, salt and pepper and serve.

Awesome side dish! I added some additional lemon juice, mint, EVOO, and parsley uncooked to the mix right before serving. Did not use fresh basil.
I made this but instead of tomatoes I added chopped bacon( I don’t do tomatoes well) it was a favorite!
So good! I added a little lemon juice at the end for brightness. This will be my go to healthy side.
Absolutely an amazing add on to dinner. Actually made a larger recipe and had them cold the next day. Hot or cold, delicious.
We were looking for a healthy side for tonight’s dinner and not the standard French version of lentils. This was perfect! I don’t mind leafy greens like spinach but wife is not a big fan. So we left them out. And dear Ellie your healthy recipes are full of goodness but you forgot one ingredient. Garlic. Just a finely minced clove. Got to have it. All I can say.
A perfect Meatless Monday meal. Followed the recipe exactly except omitted the mint. The lemon juice adds a wonderful flavor to the mix.
I added a red onion, subbed garlic for the shallots, and I didn’t have mint, lemon, or parsley, so I topped it with a balsamic reduction and it was amazing! My finance loved it as well. We loved all the veggies!
Excellent. I added cooked pieces of spicey sausages; added a nice zip and made the dish more substantial.
I enjoyed this, my husband not so much. It needed something, and after I added goat cheese, it was much better. It just needs a bit of flair from cheese I think. Only then it won’t be vegan.
Replaced Lentils with dried peas, and basil and mint with paprika, sooooo good! Will do it again!
