Herb-Crusted Shrimp

Instructions

  1. Toss 1 cup panko breadcrumbs, 1/4 cup olive oil, the juice of 1 lemon and a handful each of chopped parsley, basil and chives; season with salt and pepper. Press both sides of 1 pound peeled and deveined shrimp in the breadcrumb mixture and broil until golden, 3 to 4 minutes. Garnish with chives.

I made it exactly as the recipe stated except that I added some old bay and black pepper to the panko mixture.  I covered the shrimp with the extra panko herb mixture and broiled it 3-4 minutes each side.  It was light and delicious!

I love breaded shrimp, especially when it’s healthier than frying it! I tossed the shrimp in a couple of eggs whites before breading and baked at 400 degrees for 8 minutes…broiling scares me. I had used up all my basil, so I replaced it with cilantro. If you are using a lemon, might as well toss in the zest too!
