Blistered Tomatoes in the Snow

Ingredients

  1. 3 tablespoons canola or vegetable oil
  2. 3 cups grape or pear tomatoes (preferably a mix of yellow and red), washed and dried
  3. 4 cloves garlic, sliced thin
  4. 4 ounces French feta or 3 ounces Greek feta, crumbled
  5. 1 teaspoon dried oregano
  6. Pinch cayenne
  7. Salt and fresh ground pepper

  9. 2 tablespoons chicken broth

Instructions

  1. Heat the oil in a large skillet over medium-high heat. Just before it starts to smoke, add the tomatoes (they will pop and sputter). Cook until the tomatoes blister and their skins char, 3 to 4 minutes. Reduce the heat to medium-low, add the garlic, and cook for 1 minute. Turn off the heat and add the feta. Add the oregano and cayenne, and season with salt and pepper. Stir in the broth and serve.

Even though I read the recipe incorrectly, a pint of tomatoes, 3 cloves, 4 oz. Greek feta and no chicken broth it had all the flavors and was excellent.  It tasted like PIZZA.  It didn’t fit in as a side dish with the rest of the meal but it was the best part.  I’ll definitely make this again, correctly but I won’t open a whole can of chicken broth just for 2 T. if I don’t have one open.  I purchase grape tomatoes a lot but forget to use them before they go bad so this is the perfect use.  Can’t wait to try it paired with some of the other suggestions or over a grilled steak or as a pizza sauce.  YUM
