Apple Cranberry Phyllo Turnovers

Ingredients

  1. 4 Granny Smith apples, peeled, cored and cut into 1/4-inch slices (about 1 1/2 pounds)
  2. 1/3 cup dried cranberries
  3. 1/3 cup packed light brown sugar
  4. 1/2 teaspoon ground cinnamon
  5. 1 pinch ground nutmeg
  6. 1 teaspoon cornstarch dissolved in 1 tablespoon cold water
  7. 6 sheets phyllo dough, thawed
  8. 3 tablespoons canola oil
  9. 4 ladyfinger cookies, crushed, divided
  10. Cooking spray

Instructions

  1. Preheat the oven to 350 degrees F.
  2. In a large nonstick pan cook the apples, cranberries, sugar, cinnamon and nutmeg over medium heat stirring occasionally until the fruit is tender, about 10 minutes. Stir in the cornstarch mixture and cook for another 2 to 3 minutes, until the juices in the pan thicken. Set aside to cool.
  3. Lay a sheet of phyllo onto a large cutting board and brush the dough with oil. Top with a second sheet and brush with oil. Sprinkle half the crushed cookies on top. Add another sheet of phyllo and brush with oil. Cut the phyllo into 4 long pieces. Put a small mound of the apple mixture about 1-inch from the bottom of 1 section and fold the phyllo over the mixture into a triangle-shaped pocket. Continue to fold to maintain the triangle shape so a turnover is formed. Repeat with the other 3 sections. Repeat the whole process again with 3 more sheets of phyllo so that you wind up with 8 turnovers. Be sure to reserve a little oil to brush the top of each turnover.
  4. Spray a baking sheet with cooking spray, place the turnovers on the sheet, brush the tops with the remaining oil and bake for 20 to 25 minutes or until nicely browned. Serve warm.

This was delicious. I didn’t have cranberries so I used golden raisins and I omitted the lady fingers but it was still great. The phyllo dough I used seemed to be smaller than hers so I ended up with smaller turnovers and more of them, but I actually liked it that way better. The only problem was they were a little oily and I even used less than 3 tbsp. so next time a bit less and they’d be perfect. My whole family and bf loved them and I liked the fact that there wasn’t a lot of added sugar. Wasn’t that hard to make either. Definitely a keeper.

these are very good. The phyllo was a little tricky, so I made square packets instead of the triangles. I froze the left overs by wrapping them individually in waxed paper, then foil then placing all of them in a ziplock freezer bag. Just took some out of the freezer..let them thaw wrapped..then removed them from the freezer wrapping and heated them for a few minutes on a baking sheet at 400…they were amazing!

This is a great recipe, I used Ramkins to make individual desserts with them. It was easier for me to handle the Phyllo dough this way too.

Everyone loved them. It was a very easy recipe. I personally could not get a good handle on the phyllo dough, my turnovers were not triangle shape. Who cares they were good.

I made these to bring to my daughter & son in laws house for desert and they loved them. I used crushed cinnamon graham crackers in stead of lady fingers. Worked out very nicely-Bake time seems a little too long. Will def. make again.

These are lovely turnovers. I had to skip the ladyfingers though, didn’t have them so I used my maple pecans (crushed) in between the layers instead and they worked perfectly. I was amazed you could make the filling without butter and it still tasted that good. Best eaten right away though, phyllo doesn’t stay crispy for long. ~ suziethefoodie

This was so easy and I loved making it. I loved how the cornstarch brought it all together at the end of cooking the apples in the pan. The smell while cooking it was heavenly. I baked at 400 instead of 350. It took shorter time since I was in a rush and had to bring these for dessert. I also used egg wash instead of canola oil, but will try that next time. They were a big hit! I was afraid the cranberries would make it too tart but it all went together well. I even used some plums I had in the fridge and that went well also. I will be using this again and again. Thanks!
