Ingredients
- Nonstick cooking spray, for coating baking dish
- One 8-ounce whole wheat baguette, cut into twenty-four 1/4-inch slices
- One 12-ounce can evaporated fat-free milk
- 1 cup reduced-fat (2-percent) milk
- 1 teaspoon pure vanilla extract
- 1/4 teaspoon almond extract
- 1/4 teaspoon ground cinnamon
- Pinch kosher salt
- 4 large eggs
- 1/3 cup chopped pecans
- 1/4 cup plus 2 tablespoons pure maple syrup
- 1/8 teaspoon ground cinnamon
Instructions
- For the French toast: Coat a 9- by 13-inch baking dish with cooking spray. Arrange the bread slices on the diagonal in 3 rows in the dish, slightly overlapping the slices. Whisk together the evaporated milk, milk, vanilla and almond extracts, cinnamon, salt and eggs until well combined. Pour the egg mixture over the bread slices, taking care to evenly coat the bread. Cover with aluminum foil and refrigerate for at least 8 hours, or overnight. Preheat the oven to 350 degrees F. Remove the foil from the baking dish and spoon any remaining egg mixture over the top of the bread pieces to assure they are evenly moistened.
- For the topping: Sprinkle the pecans evenly over the bread. Sprinkle with 2 tablespoons of the maple syrup and the cinnamon. Bake until golden, about 40 minutes. Drizzle with the remaining 1/4 cup maple syrup and serve.

This recipe is delicious, I did some chages and instead of maple syrup I used spice honey and for the cinamon topic I used a 1/2 tbsp of white sugar, cinamon and nutmeg with a hint of ground clove!

Interesting! There are so many things you can make out of a Casserole. But I never thought about making Breakfast foods out of ones. (well, an Omelet you can). Very different and unique. The kcal is only 320. Not bad!!

Delicious recipe I did for friends and family and always received a lot of compliments!!!
Lessons from bread pudding tells us to cube our bread 1/2″ pieces. All of these recipes hitting the sites are basically baked bread pudding variations. I alter each of these varieties by using 6 cubed slices of bread in a round quiche ceramic plate (taller side than pie plate and not slanted). Always use 4 extra-large eggs – adding the variations each recipe calls for that gives it it’s unique flavor. The above receipe may be soggy because of the amount of the evaporated milk / skim milk — a total of 1 1/2 cups using whole milk or 1/2 and 1/2 in place of the skim milk should provide a non-soggy bake. It took me 40 years of cooking / baking to be able to know a good recipe on sight and know what is wrong with a receipe on sight. Happy cooking folks – I hope you get there sooner than I did. 🙂
Way too soggy.
I reduced the recipe because there aren’t 6 people in my household + I am using Texas toast and topping it with smashed macadamia nuts. I will see how it tastes in the morning 🙂
