Ingredients
- 1 (18 1/4-ounce) box devil’s food cake mix
- 1 (15-ounce) can 100-percent pure pumpkin
- Fresh berries, for serving, optional
Instructions
- Preheat the oven to 400 degrees F.
- Pour cake mix into a large bowl and whisk to remove any lumps. Add pumpkin and stir until completely smooth and uniform.
- Cook’s Note: Do not add any other ingredients that may be mentioned on the cake mix box, like eggs, oil, or water. The mixture will be very thick, so you might be tempted to add in other things to make the batter smoother. Do not do this!
- Place batter into a 12-cup muffin pan lined with foil baking cups and/or sprayed with nonstick spray. Place pan in the oven and bake until a toothpick inserted into the center of a muffin comes out clean, about 20 minutes.
- Allow to cool slightly and then serve. Garnish with fresh berries, if using. Enjoy!

My entire family is trying to eat healthier so I found this recipe for our Sunday night dinner. Everyone loved them and with only 2 ingredients, they were so easy!!! I will be making these again in the future. However, I used cupcake liners and they stuck to the liners so next time, I won’t use a liner but just spray the cupcake pan with cooking spray. I also added a few chocolate chips after reading the reviews.
This was definitely approved by my family! They were fantastic! However, we added a few tablespoons of chocolate chips to the mix (4 year old’s request). He even knew there was pumpkin in it and still enjoyed them. Super easy to make with little kids. I’m a from scratch baker, but mothers know that it can be way harder to bake scratch with littles helping. some days you want to appease their wish to bake without the headache of the mess.
What a waste of a can of pumpkin. Perfectly awful. I tasted one and then dumped the rest in the garbage, I am “from scratch” baker and a good one at that. I can see why some people would appreciate how easy these are to put together, but for those of us who really enjoy baking I’ll stick to the real thing.
These are good! my kids reallly like them they have been eating them up! they are not super chocolatey.. and I wouldnt really consider them brownies by any means but they are a nice choc muffin without the 450 calories!
Delish! healthy and my kids don’t even know it’s pumpkin
Does anyone have an alternate recipe to do from scratch instead of the mix? I’d really like to swap out the flour for wheat/almond flour, and use less/alternative sugar/sweetner… They are very tasty but with diabetics in mind, I’d like to lessen the carbs…
These were good, I was skeptical with the reviews below but we liked them.
I cannot say these taste like brownies but I thought they still turned out great – moist, not too sweet and so easy to make. My 5 year old son enjoyed them very much and my vegan friends loved the idea that our brownies included pumpkin. I did not have mini muffin liners but liked the rustic look of my brownie muffins when they were plated. Will definitely try other Hungry Girl recipes in the future.
what brand of cake mix does she use? as all the boxes and containers are covered ?
I will not make these again; definitely will not serve to others. I rather have just one piece of the real thing every now & then.
