Ingredients
- 1 15-ounce can butter beans, drained and rinsed
- 1 12-ounce jar roasted peppers (red, yellow or a combination), drained and chopped
- 1/4 cup chopped dill pickles
- 2 stalks celery, diced
- 2 tablespoons chopped fresh parsley
- Finely grated zest and juice of 1 lemon
- 1/4 cup extra-virgin olive oil
- 1 1/2 pounds skinless, boneless chicken breasts
- 6 sprigs thyme
- 1 red onion, halved and sliced
- 1/4 teaspoon red pepper flakes
- 6 cups mixed baby greens
Instructions
- Combine the beans, roasted peppers, pickles, celery, parsley and lemon zest and juice in a large bowl.
- Heat the olive oil in a large skillet over medium-high heat. Add the chicken and thyme, then scatter the red onion and red pepper flakes around the pan. Cook until the chicken is browned on the bottom and the onion is soft, about 4 minutes. Turn the chicken, add 1/4 cup water, cover the skillet and reduce the heat to low. Continue cooking until the chicken is cooked through, 5 to 8 more minutes. Transfer the chicken to a cutting board; discard the thyme. Add the cooked onion to the bean mixture.
- Thinly slice the chicken against the grain and add to the bean mixture. Add the greens and toss to combine.

Not a good choice. Needs flavor. Needs salt. Maybe add parmesan cheese? We added light soy to make it edible. Don’t waste your time.
I love this recipe, which looks very easy and healthy. what’s more,I love chicken. once I visit a website(http://www.creative-proteomics.com/Application/Food-and-Beverage-Analysis.htm),it shows that the chicken is much easier than other food to be digested. But one thing I have to point out is that I do like pepper, is there any other ingredients can replace pepper?
Good taste, I did put more spices than asked.

Sooo good, admittedly a lil dry but there is still a lot of flavor so I made a few changes. Instead of pickles, I used capers. I mixed everything together including the chicken and then added the lemon with a couple dashes of balsamic to taste Not too much to saturate but enough to give it a lil tang. And then added pepper and a couple grinds of the salt mill. I think this would also be good with minced green olives but I didn’t use because my honey doesn’t like them so much.
I liked this pretty well and would make it again. I took the advice of the reviewers who said it was dry and served it with a red pepper vinaigrette. I added maybe a tablespoon of dressing to my portion and thought it was just right. I have leftovers, so I’m a little sorry I added the lettuce to the mixture–it’ll probably get pretty soggy. Next time I’d keep the bean mixture separate and allow people to serve their own portions of greens and protein.
Just finished the salad with my wife and a few glasses of Woodbridge Chardonnay out on the deck. I was curious why there was no salt and pepper in this recipe. It initially appeared to be bland but when we ate the salad with all the ingredients, it came alive in a different way. We could taste all the ingredients and really like it as being light and refreshing. We actually liked it not having salt and black pepper. The other flavors made it tasty. Enjoyed the meal. Might try some Tony’s and feta cheese next time we make it.
This salad is filled with good flavors and is light and healthy tasting. There isn’t anything robust about it, it’s almost a little dry. But it’s a nice change from pouring salad dressings to add flavor.
I’m eating this salad as I write this. This has zero flavor. You will need a good vinaigrette on hand to eat this recipe. 🙁
It’s an excellent recipe. I followed it to the “T” and it really turned out well! Enough food for 4 people. Served with warm pita bread. Awesome summer meal.
