Tuscan White Beans

Instructions

  1. Cook 2 smashed garlic cloves and 1/4 teaspoon red pepper flakes in olive oil in a large skillet over medium-high heat, 1 minute. Add 1 chopped plum tomato and 1 sprig rosemary and cook 2 minutes. Add 2 cans drained, rinsed cannellini beans and cook, partially smashing the beans with a spoon, 5 minutes. Remove the rosemary. Stir in 1/2 cup water and some chopped parsley; season with salt. Sprinkle with parmesan and broil until golden. Drizzle with olive oil.

it says to broil at the end, so you put this into the oven to broil after its been cooked on stove?

Not sure what I did, but this was not the transformative dish I was hoping for based on the other reviews. Followed the recipe consistently with the exception of adding 2 tomatoes instead of 1 because 1 looked like too little. Curious if I didn’t mash the beans enough, because the dish was a bit watery when I served it. Flavor was OK, but texture of the beans was a little firm. Not planning to make this again.

Easy recipe.  Added sauteed diced onions and diced carrots.  Substituted 1/2 of the liquid with some dry sherry. I made a bed of the bean mixture and topped with some roasted, lightly breaded eggplant.  It was a great meatless meal.  It was a hit!
