Ingredients
- 1 turkey carcass (from a roasted bird)
- 2 onions, cut into chunks
- 2 carrots, cut into chunks
- 3 stalks celery, cut into chunks
- 1 bunch fresh parsley
- 4 cloves garlic, smashed (unpeeled)
- 1 teaspoon black peppercorns
- 2 bay leaves
Instructions
- Insert kitchen shears into the carcass and make a few cuts to get you started. Then, use your hands to carefully pull the carcass into 4 or 5 pieces.
- Combine the carcass, onions, carrots, celery, parsley, garlic, peppercorns and bay leaves in a stockpot. Cover with cold water (about 7 quarts).
- Bring to a boil, then reduce the heat to medium low. Simmer about 2 hours, occasionally skimming any foam or fat from the surface with a large spoon or ladle.
- Pour through a large mesh strainer into a pot; discard the solids. Cool slightly, then refrigerate in covered containers for up to 3 days or freeze for up to 2 months.

This is a delicious rich broth. I used a frozen carcass from Thanksgiving and followed it except for the parsley because I had none. It turned out delicious. I added a few herbs but nothing major. Yummy!
If you do not have a Carcass you could use 1.5 to 2 lbs turkey parts, such as wings, legs, necks. Roast them first at 400 for 30 to 35 minutes. The whole carcuss is better I think, but the parts work well too.
Good recipe, that I make before hand to make a make ahead turkey gravy.
I’d add onions quarters because I think onions and celery just go together especially turkey day the smell in the kitchen at 6 o’clock in the morning gets the family hungry This year I think a new tradition is requied so would like to try one of the cinnamon rolls for the morning with my special orange juice the grandkids and adults go wild for
The food kitchen recipes have never let me down. This was no exception. I made it exactly as written. Rich, delicious soup. Used some for noodle soup and made a turkey a la king type filling to pour over biscuits. One turkey, 4 meals. I love turkey. Eat it all year.
I also used loads of celery
