This pretty emerald juice is a great way to use up greens you may have sitting in the fridge. It’s also a good source of both vitamins C and K. Be sure to drink your juice as soon as possible after it’s made for the most nutritious bang. Adding chia seeds helps replace the fiber that is lost in the juicing process.

Ingredients

  1. 1 to 2 large, juicy lemons, peel and pith removed
  2. 1 medium Granny Smith apple, peeled and cored
  3. 2 romaine lettuce leaves
  4. 1/2 large cucumber, washed
  5. 1 cup loosely-packed hearty greens, such as spinach or kale
  6. 1 tablespoon chia seeds, optional

Instructions

  1. Juice, in this order, the lemons, apples, lettuce, cucumber and greens, following your juicer’s specific settings for each. Stir in the chia seeds if using and let soak for 5 minutes.
