Ingredients
- 1 pound cremini mushrooms, halved
- 1 tablespoon extra-virgin olive oil
- 1 large sweet onion, diced
- 1 3/4 cups light beer (drink what’s left in the bottle)
- Kosher salt
- 1/3 cup finely chopped walnuts
- 1 small green bell pepper, seeded and diced
- Freshly ground black pepper
- 1/2 teaspoon chipotle chile powder
- 1/4 cup ketchup
- 3 tablespoons tomato paste
- 6 whole grain hamburger buns
- Shredded red cabbage or lettuce, pickled jalapeno and scallions, for serving, optional
Instructions
- Pulse the mushrooms in batches in a food processor until finely chopped. Set aside.
- Heat the oil in a large nonstick skillet over medium-high heat. Add the onions, 1 tablespoon beer and 1/4 teaspoon salt and cook, stirring frequently, until the onions are lightly browned, about 5 minutes. Add the walnuts and peppers and cook, stirring occasionally, until the peppers are crisp-tender, about 3 minutes. Add the mushrooms, 3/4 teaspoon black pepper and chipotle powder and cook, stirring frequently, until the mushrooms are just cooked through, about 5 minutes.
- Add the remaining beer, the ketchup, tomato paste and 1/8 teaspoon salt and cook while stirring until the sauce is the consistency that you like, about 2 minutes.
- Spoon the mixture onto each bun. Serve with toppings if desired.

Very good, followed recipe…but subbed Belgian Wheat Ale for light beer, used 1 cup…used 5 scallion stalks instead of green pepper…chili powder/dash of smoky paprika n cayenne pepper instead of chipotle pepper…two keys, use machine to mince Walnuts, very healthy nut…second, need to use a shallow pan so beer can simmer off a bit, I used a 12” diameter one…add Dave’s seed bread for even healthier result

Sorry, but these were not good. Lots of modifications were needed. The mushrooms were too mushy, and it didn’t get much better with longer cook time to dry them out a bit. Terrible!
I made this recipe and substituted vegetable broth for the beer. It was delicious! I will make this again.
Most of the cooking steps took much longer than the recipe indicates. I did not use all the beer (used about 1/2 cup) and it took about 25 minutes to cook down into something that resembled sloppy Joe. Like many other reviewers, I added Worcestershire sauce and also a bit of sugar. The texture was okay, but I think I’ll go back to a lentil sloppy Joe….better texture and less expensive than mushrooms.
Absolutely delicious, but like most reviewers I had to modify this quite a bit. Added cumin and Worcestershire. Nixed the beer all together. Replaced chipotle with cayenne. No peppers or walnuts. 3 types of mushrooms.
THESE WERE PHENOMINAL. I used an IPA instead of light beer, and I just added here and there to make it saucier. I also added cumin, garlic, and red pepper flakes. I buttered the buns and dressed with the recommended toppings and served it with sweet potato fries. My “has to have meat with dinner” husband said these were way better than normal Sloppy Joes.
This recipe lacked flavor. I would definitely add some cumin and garlic. I’m going to try and save it by adding spices. The nuts introduced an odd and unnecessary flavor and texture profile.
So overall a good recipe. I will make it again. BUT… do not add 1 3/4 cups of beer! Took me 25 minutes to food down basically making good tasting mush. May be a typo and should read 3/4 cup of beer. Still great flavor for a high protein low cholesterol recipe.
I did not use the beer. I used 1 cup veggie broth I made in insta pot.
