This speedy approach to ramen uses the flavor packs that come with instant ramen noodles to create a quick “homemade” broth. The noodles, along with bok choy and seasoned ground beef, make it a hearty take on the traditional Japanese soup.

Ingredients
- 1 pound lean ground beef
- 1 tablespoon hoisin sauce
- 1 tablespoon soy sauce
- 2 tablespoons chopped scallions
- 2 tablespoons chopped peeled ginger
- 3 cloves garlic, chopped
- Kosher salt and freshly ground pepper
- 2 tablespoons vegetable oil
- 1 1/2 cups sliced shiitake mushroom caps (about 6 ounces)
- 4 heads baby bok choy, quartered lengthwise
- 4 3-ounce packages instant ramen noodles (preferably spicy-flavored), 1 flavor packet reserved
- 1 Fresno chile pepper, seeded and thinly sliced lengthwise
Instructions
- Combine the beef, hoisin sauce, soy sauce, scallions, half each of the ginger and garlic, and 1/2 teaspoon each salt and pepper in a bowl. Heat 1 tablespoon vegetable oil in a large skillet over high heat. Add the beef mixture and cook, breaking up the meat, until browned, 5 minutes.
- Add the mushrooms to the skillet; cook, stirring, until wilted, 1 to 2 minutes. Transfer the mixture to a bowl. Wipe out the skillet, then heat the remaining 1 tablespoon oil over medium-high heat. Add the remaining ginger and garlic and cook until golden brown and crisp, 2 to 3 minutes; set aside.
- Bring 4 cups water to a boil in a large pot over high heat. Add the bok choy and ramen noodles along with the reserved ramen flavor packet. Cover and cook, stirring halfway through, until the boy choy is wilted and the noodles are tender, about 4 minutes. Add the beef-mushroom mixture to the pot and toss to combine. Top each serving with the ginger-garlic mixture and the sliced chile.

This was very yummy and came together quickly. We enjoyed all the flavors, but my husband felt there was something missing…maybe a little more heat…? Other than that, an easy ramen recipe we would definitely make again.
Great flavor. Used jalepeno for additional spice. I’ll add more waiter to noodles next time, we like broth with our ramen and the 4 cups were soaked up completely.
A recipe needs to be pretty good for me to like ground beef – the dish ended up tasting good, but was pretty oily. This was even after I drained the oil after browning the beef. I think next time I would chop the bok choy so its easier to incorporate into the dish.
This was really good. I think next time I will use actual ramen noodles instead of the instant packets. The packet noodles got pretty mushy for leftovers and I think ramen might hold up better.
This recipe is a good “base”, as it is well worth it to upgrade the ground beef to steak or stew beef. I think the calories ARE correct, as you only use 1 of the flavor packets from the ramen. Those packets contain some bouillon, which adds calories. Concerned dieters could leave it out altogether and add their own paprika, chile power, and ground pepper.
I absolutely loved this dish. I used a bit more Hoisin sauce along w/ some some sriracha hot sauce w/ the beef, and it was dynamite! The crunch of the baby bok choy just ties it all in. Yum…
Soooooo good and a very original twist on a low budget favorite! I couldn’t find Fresno chiles anywhere so I used a Serrano. My boyfriend loved it so much he left his bowl out, just in case!!

This dish is just ‘okay’. I have made many Food Network recipes and this one falls short in the flavor department. If I were to make this again, I would not combine the beef in the pot at the end, rather serve them on top of the noodles. Dieters beware: I think the serving size is wrong! It should be 8 servings instead of 4. One block of Ramen is 380 calories on its own!
