Spiced Kettle Corn

Ingredients

  1. 2 tablespoons vegetable oil
  2. 2 tablespoons butter
  3. 1/2 cup popcorn kernels (unpopped)
  4. 3 tablespoons sugar
  5. 1 teaspoon fine salt
  6. 1 teaspoon ground cinnamon
  7. 1/2 teaspoon cayenne

Instructions

  1. Have a hot pad or kitchen towel and a paper grocery bag or large baking sheet handy. Heat the vegetable oil in a large heavy-bottomed Dutch oven or pan over medium heat. Place a couple of kernels of popcorn in the pan. When the kernels pop, proceed to the next step.
  2. Once the oil is hot enough, add the butter and stir quickly into the oil to prevent burning. Immediately add the popcorn and stir (the butter may not be completely melted). Add the sugar right away and stir again. Cover the pan, and start shaking it gently back and forth on the burner, using a hot pad or kitchen towel to protect your hands. Keep shaking as the popcorn pops.
  3. Once you start hearing 1 or 2 seconds of quiet between the pops, turn the heat off immediately. This means the popcorn is mostly popped. (Be careful not to overcook, as the popcorn can easily burn.) Pour the popcorn into the paper bag or onto the baking sheet and sprinkle with salt, cinnamon, and cayenne. Allow to cool a few minutes before placing in a bowl. (Careful, the hot sugar makes the popcorn extremely hot!)

Made a batch for a playoff party and after 1 not so good batch it was awesome. You gotta watch your heat, not too high. I also used chili powder instead of cayenne.

I’ve tried a lot of kettle corn recipes and this one is by far the best. I did put 1/2 a tablespoon of salt instead of a full tablespoon and this tastes fantastic.

I failed, the sugar burnt and  some of the corns as well as I added the sugar without shaking constantly.. also 1 tsp of salt is too much, 1/2 tsp is enough. Next time I will eliminate the sugar and use 1/2 tsp.

This is the best kettle corn I have had. Those who burned their popcorn cannot cook. The sugar makes the popcorn extra crunchy.

Mine was bad. I eat popcorn almost constantly, and I’ve never burnt it until this recipe. Was it the sugar? Or the fact that they had me pre-heat the oil which I normally never do? I didn’t like the spice mix either– it tasted mostly salty. I couldn’t taste cinnamon or red chili powder. I’ve made honey-cinnamon pocorn that was great, and I make curry popcorn with chili powder a lot too. But this recipe tasted like almost nothing but salt to me.

SUPER delicious!! I have a hot air popper though, so we just put the sauce mix over the popcorn. We had to use more sauce than stated, but the blend was really good.

WAY TOO SALTY! Inedible. No one else has mentioned this, but I measured everything before beginning. Did everyone else use one teaspoon salt, as the recipe calls for? My popcorn did not burn, though. If I were to try making this again, I would increase the amount of sugar and only add salt to taste.

too spicy for me…I would NEVER USE GROCERY BAGS FOR FRESH FOODS. When I lived down south we were told that ALL grocery bags ( paper and plastic are treated with chemicals to deter rodents and mosty roaches from taking up residence in them, which you would carry to your home.. AND have you thought of all the dirty canned goods etc you put in those bags ( have you ever seen some of thse people who stock shelves?. and now you want me to take good food and contaminate it all so i can save washing a bowl?????.what is wrong with using a big tupperware or rubbermaid bowl to stir thing in? this is one short cut i would never do. UGH! one star for the way it was prepared.

This was the WORST recipe EVER! I am certainly quite capable in the kitchen but this stupid popcorn NEVER popped depsite my following the directions to the T. All I got was a burned MESS that was so much fun to clean up. I will NEVER make this recipe again! DISASTER. I would give this recipe less than 1 star if possible.

Although I must admit I omitted the cayenne because I am a WIMP, my family and I loved this popcorn recipe! It’s wonderfully sweet & salty and if you prepare your ingredients ahead of popping the corn and follow Melissa’s steps – it comes out great. I can’t tell you how happy I am to have this recipe instead of paying for the pre-made stuff at the grocery store. Thank you so much Melissa!
