Not only is salmon family friendly, it cooks quickly so there is time for a short marinade to infuse it with even more flavor while getting the rest of the meal together. Ingredients
- 2 tablespoons low-sodium soy sauce
- 2 tablespoons maple syrup
- 1 tablespoon fresh orange juice, plus 1 teaspoon grated orange zest
- 3 cloves garlic, smashed
- 4 5-ounce skinless center-cut salmon fillets (preferably wild)
- 4 cups cauliflower florets (from 1 small head)
- 1/4 cup fat-free low-sodium chicken broth (or use water)
- Cooking spray
- Kosher salt and freshly ground pepper
- 1 tablespoon extra-virgin olive oil
- 2 tablespoons dried cranberries
- 2 tablespoons chopped pistachios or almonds
- 2 tablespoons chopped fresh parsley
Instructions
- Preheat the oven to 400 degrees F. Mix the soy sauce, maple syrup, orange juice, 2 garlic cloves and 2 tablespoons water in a large bowl; add the salmon and turn to coat. Cover and refrigerate 20 minutes.
- Meanwhile, put the cauliflower and broth in a microwave-safe bowl; cover loosely with plastic wrap and microwave until tender, 6 minutes.
- Coat a rimmed baking sheet with cooking spray. Drain the fish, season with salt and pepper and place on the prepared baking sheet. Bake until slightly golden around the edges, 8 to 10 minutes.
- Meanwhile, heat the olive oil and remaining garlic clove in a large skillet over medium-high heat; cook, breaking up the garlic with a spoon, until softened, about 2 minutes. Add the cauliflower and broth, the cranberries, pistachios, orange zest, parsley, 1/4 teaspoon salt, and pepper to taste and stir to heat through. Serve with the fish.

Salmon was delicious just by nature of being salmon but the marinade was nothing special (still good just not a huge pop of flavor). I liked the cauliflower recipe a lot. Maybe longer marinade time would have made this pop more.
This recipe was just ok for me and the rest of my family. Everyone liked the cauliflower but thought the salmon wasn’t anything special.

Note: I lightly roasted the cauliflower instead of using microwave and then added broth with rest of ingredients at end. Served with Food Networks warm farro salad. Yum!
I’ve been making this recipe for salmon for 5+ years. There’s something about the combination of Soy Sauce, pure maple syrup, and a bit of orange to brighten the sauce that yields (In my opinion) a wonderful (perfect?) salmon dish. None of the flavors overpower the salmon, but rather compliment the flavor of the salmon. If you haven’t tried it yet, please do!
Very good! I didn’t have soy sauce so I had to use Worcestershire in its place and it was still good. Loved the cauliflower as a side!
This entire dish was crazy good! The salmon was flavorful, with just the right amount of sweetness balancing the soy. The cauliflower was absolutely incredible! I overcooked mine (oops!) so it turned into more of a cauliflower rice, but the added dried cranberries and chopped pistachios completely elevated the entire dish. I can’t wait to make this again!
This was a nice change from the usual veggies I make with salmon. I loved the orange maple soy glaze. I decided to roast the cauliflower and it was delicious, the cranberries and pistachios were a nice touch.
Love this recipe. I have made it several times. Both the cauliflower and salmon are great. The salmon has a little sweet taste to it. Very easy to do. The cauliflower with pistachios, orange cranberries and orange blends very well together. Yummy
Just made the salmon. It was delicious! I simmered and reduced the remaining marinade to make a glaze and served with coconut rice. Yum.
Followed instructions to a T. It’s delicious!!! So much better than the marinated one I used to get from Whole Foods.
