A favorite appetizer at many Mexican restaurants, this classic combo pairs freshly fried tortillas with simple and refreshing salsa.

Ingredients

  1. 4 ripe tomatoes or 4 plum tomatoes, cored and roughly chopped
  2. 1/2 medium onion, finely chopped (about 3 tablespoons)
  3. 1 jalapeno (or to taste), minced
  4. 1/4 cup chopped fresh coriander (cilantro)
  5. Kosher salt and freshly ground black pepper, to taste
  6. Tortilla Chips, recipe follows
  7. Vegetable oil for frying
  8. Twelve 6-inch corn tortillas (preferably white)
  9. Fine salt

Instructions

  1. In a small bowl, mix together the tomatoes, onion, jalapeno, coriander. Season with salt and pepper. Cover with plastic wrap and set aside for 1 hour. Serve with Tortilla Chips.
  2. Pour the oil into a large heavy-bottomed pot to a depth of about 2 inches. Place a deep-frying thermometer in the pot. Heat the oil over medium heat to 360 degrees F.
  3. Meanwhile, stack the tortillas, and cut the pile into sixths to make chips.
  4. Raise the heat to high. Working in batches, fry the chips, turning them with a skimmer or slotted spoon, until golden brown, about 2 minutes. Using a slotted spoon, transfer the chips to a paper towel-lined pan to drain. (Return the oil to the proper temperature between batches.) Cool and season with salt. Serve.

I have made this several times in the last few yrs.. My family enjoys it immersely!. Only changes are No cilantro  and sometimes I add half a minced red pepper

Never made salsa before and I am sucks in the kitchen. Took me 40 minutes and a messy kitchen just to chop the tomatoes. But… this is the easiest recipe I found and the result was better than I expected… really good!

This salsa recipe made my husband and me very sick to our stomaches. I put this recipe together as soon as I came home from the grocery so I know all of my vegetables were fresh. I followed it exactly and it was not tasty at all. I would highly reccommend several other recipes from foodnetwork.com, but not this one! -sorry.
