Salmon with Maple-Dijon Glaze

Ingredients

  1. Nonstick cooking spray, for spraying the casserole dish
  2. One 2-pound center-cut wild salmon fillet, skin on
  3. 1/4 cup Dijon mustard
  4. 2 tablespoons maple syrup
  5. 2 tablespoons olive oil
  6. 1 tablespoon fresh thyme leaves
  7. 1/4 teaspoon ground cumin

Instructions

  1. Preheat the oven to 425 degrees F.
  2. Spray a parchment-lined casserole dish with nonstick spray and lay the salmon in it skin-side down.
  3. In a small bowl, whisk together the mustard, maple syrup, olive oil, thyme and cumin. Pour the mixture over the salmon, spreading to coat it evenly.
  4. Bake until just cooked through, 12 to 15 minutes. Transfer the salmon to a serving platter.

I followed this recipe, and it was pretty good. I did add some garlic and cut back on the cumin. Also, lightly salted and peppered the salmon prior to coating it with the mixture. I’d make this again.

Underwhelmed! Bland. I placed fish under broiler after baking to get nice color on the fish. The fish cooked nicely, moist but lacked favor. Will not repeat this recipe
