Quinoa Salad

Ingredients

  1. 1 cup quinoa
  2. 2 cups chicken or vegetable stock
  3. 1 hothouse cucumber, diced
  4. 2 scallions
  5. 1/2 cup roasted red pepper, diced
  6. 1/4 cup flat leaf parsley, finely chopped
  7. 1 tablespoon fines herbs (recommended: Spice Island)
  8. 1/4 cup crumbled feta cheese
  9. 3 tablespoons slivered almonds
  10. 9 cups spring salad mix
  11. 1/4 cup light roasted garlic and balsamic salad dressing

Instructions

  1. Combine quinoa and stock in small pot and bring to a boil. Reduce to simmer and cover. Cook 10 to 15 minutes or until liquid has been absorbed. Let cool completely.
  2. In a large mixing bowl, combine cooled quinoa with remaining ingredients. Toss to mix thoroughly.
  3. Serve chilled on a bed of greens tossed with a little dressing.

I’ve been making this for years. I generally do not use the fine herbs as I almost never have that mix on hand. I have approximated it at times with the herbs I do have, but mostly I just love it with a ton of fresh flat leaf parsley. I also substitute diced celery for the nuts because I don’t like nuts in my food, and the celery still gives it great crunch. Other than that, I use EVOO, red wine vinegar, and S&P that I only put on when I’m ready to eat the salad because I feel the quinoa degrades to an unpleasant texture (sort of mushy) if it sits in vinegar or salt too long. It is a delicious, refreshing, and healthy, protein-packed accompaniment for any dish. My significant other devours it.

Very good and delicious! I did add the zest and juice of a lemon to give it some acid, which I highly recommend. This would be great to take for a potluck or dinner to a friend in the summer. SO easy!

Great recipe, I’ve made it for so many groups always to wonderful reviews. However, I skip the lettuce and serve it more as a side than a traditional green salad.

OMGosh! How good was THIS? I agree with Moongoddess255_. I added another 1/4 c. balsamic vinaigrette to the quinoa salad itself. I also added more feta, but then again I’m a feta fanatic. Put it on a bed of fresh greens, or mix it up, whichever way you prefer, but this one is a WINNER. Thanks, Sandy!

Made as is minus the addition of the almonds and mixed a few tablespoons of balsamic vinaigrette in the quinoa salad part before I let it set in the fridge for an hour, and it was very good. Better texture than other quinoa salads I’ve tried.
