Ingredients

  1. One 15-ounce can pumpkin pie filling
  2. 3 cups milk
  3. 1/2 cup vanilla yogurt
  4. 1/4 teaspoon cinnamon
  5. 1/4 cup cinnamon graham cracker crumbs

Instructions

  1. Spoon the pumpkin pie filling into muffin cups, then cover with aluminum foil and freeze.
  2. When you’re ready to make the smoothies, add the milk and yogurt to a blender. Pop 4 pieces of frozen pumpkin pie filling out of the pan and add them to the blender. (Save the rest of the pie filling for another time, or for a second batch of smoothies if one isn’t enough to calm the hungry beasts.) Add the cinnamon and blend until the mixture is totally smooth. 
  3. Pour into glasses and sprinkle with graham cracker crumbs.

Our adult children made and rated this on Christmas Day. We used pureed pumpkin instead of pumpkin pie filling and discovered that the flavor was too dense and not sweet enough. I recommend using half the pumpkin unless it is sweetened. After adding extra spices and brown sugar it was delicious!

I want to try this for the grandkids and thought I would just use the puree and season it like for a pie.  Then I realized it would have a raw egg. So, I’ll just use the pie filling as directed.  Anxious to see if they like it.

I made my own pie filling from some leftover canned pumpkin, added some brown sugar based on Erin’s comment, and used speculoos cookies instead of graham crackers (and because of the spice in the cookies, I omitted the cinnamon). Delish!

I usually love Pioneer Woman’s recipes, but this smoothie was not good.  I expected it to taste like pumpkin pie, but the flavor was very very wrong.  I know the yogurt is sweetened, but this recipe definitely needs some brown sugar.  Maybe it’s because I went into this expecting it to taste sweeter than it does, but it is not what I was hoping for.  Sorry.
