Pierogi with Ham and Broccoli

Ingredients

  1. 1/2 cup low-sodium chicken broth
  2. 1 16-ounce package frozen potato-cheese pierogi
  3. 1 head broccoli, cut into florets
  4. 1/2 cup sour cream
  5. 2 tablespoons chopped fresh chives
  6. 1/2 teaspoon paprika
  7. 3/4 cup shredded Monterey Jack cheese (about 3 ounces)
  8. 3 tablespoons unsalted butter
  9. 1 small red onion, thinly sliced
  10. 4 ounces deli-sliced ham, cut into thin strips
  11. Kosher salt and freshly ground pepper

Instructions

  1. Melt the butter in a large broiler-proof skillet over medium-high heat. Add the red onion and cook, stirring occasionally, until softened, about 3 minutes. Add the ham and season with 1/4 teaspoon salt and a few grinds of pepper. Cook, stirring occasionally, until the onion starts browning, about 2 minutes. Add the broth and bring to a simmer; cook until the onion softens, about 3 minutes.
  2. Reduce the heat to medium low and stir in the pierogi and broccoli. Cover and cook until the pierogi are warm and the broccoli is tender, about 15 minutes. Meanwhile, combine the sour cream, chives and paprika in a small bowl; set aside. Preheat the broiler.
  3. Uncover the skillet and sprinkle with the cheese. Transfer to the broiler and cook until the cheese is melted and the pierogi are slightly golden, 2 to 3 minutes. Serve with the sour cream sauce.

First, the recipe was very good. I substituted thin sliced seasoned chicken for the ham and it was very tasty.

Second, with regards to Anonymous on 12/23, how is it a disgrace to Polish people. Some of my best friends are Polish and when I shared your review and read the recipe they laughed. How ludicrous to say something like that. If you don’t like it, say so. Don’t throw others into your distaste for it.

My family loves this recipe! I tried it because it was different. I was in a cooking rut of italian, mexican and chinese. We make it once a month now.
