Ingredients
- 2 tablespoons olive oil
- 2 large parsnips, cut into small dice (about 2 cups diced)
- 1 red bell pepper, diced
- 1/4 red onion, diced
- Kosher salt and freshly ground black pepper
Instructions
- Preheat the oven to 375 degrees F and line a baking sheet with parchment paper.
- In a large bowl, toss together the oil, parsnips, bell peppers and onions. Season with salt and pepper. Spread in an even layer on the prepared baking sheet.
- Bake until the parsnips are browned and cooked through, about 30 minutes. Serve immediately.

I have been looking for potato substitutes since I am trying to lose weight. This one is a keeper. Tried it – loved it. This is a very good idea- nothing will replace a potato, but this one comes pretty close!
