Mint Iced Tea

Ingredients

  1. 3 green tea bags
  2. 1 quart boiling water
  3. 1/4 cup sugar
  4. 1/2 large lemon, sliced into 1/4-inch slices
  5. 1 bunch fresh mint, washed
  6. 2 cups cold water

Instructions

  1. Brew tea in boiling water, letting steep for 10 minutes. Pour brewed tea into a serving pitcher. Add sugar and lemon, and swirl in the mint, holding it by the stems and using it to stir and dissolve the sugar. When sugar is dissolved, drop mint into pitcher and add 2 cups cold water. Refrigerate until thoroughly chilled. Strain mint out before serving and serve cold.

The recipe was a refreshingly light dinner drink for our summer evening. We did not let the green tea steep for more than 5 minutes since some teas can become a bit bitter. Leaving a few mint leaves in the glass pitcher provided a very nice touch as well.

Followed the recipe w/ one change – used 5 packets Truvia instead of sugar. Was very good. Neither the lemon nor the mint overpowered it. My daughters loved it so it will be a staple in our fridge.

It’s so refreshing. I usually double the recipe. I never have fresh mint on hand so i’ve just used a few drops of mint extract instead.

what a refreshing drink – and so much more economical than buying those sugar laden green teas in the store. oh – and a lot healthier!! next time, i am going to try substituting stevia or agave nectar for sugar to make it even healthier!
