Ingredients
- 1 medium tomato, halved
- 1 tablespoon red wine vinegar
- 1 tablespoon fresh lemon juice
- 2 teaspoons dijon mustard
- Pinch of sugar
- 2 tablespoons extra-virgin olive oil
- 1/2 small clove garlic, minced
- 1/8 teaspoon dried oregano
- 1/8 teaspoon dried basil
- Kosher salt and freshly ground pepper
Instructions
- Rub the cut sides of the tomato along the coarse holes of a grater into a bowl; discard the skins.
- Whisk in 1/4 cup water, the vinegar, lemon juice, dijon mustard, sugar, olive oil, garlic, oregano, basil, 1/4 teaspoon salt, and pepper to taste.

My new go-to salad dressing! Healthy & flavorful. Omit the water if your tomato is especially juicy or use I like to use double tomato/no water.

This recipe is great but I think the serving size is off. I only got about 1/4 cup (didn’t add the grated tomato) so ended up making enough to get to 1 cup.
As others noted below, added extra herbs (rosemary and parsley) and more garlic. Perfect!
It doesn’t even make a third do a cup.
This is wonderful, light and very flavorful …just what I was looking for!
Followed the recipe and give it four stars! (ended up adding a few more fresh herbs — that bumped it up to five stars but leaving at four, per recipe)
I was surprised at how good this was. Followed the suggestion of another reviewer and threw everything, including the whole tomato, into the Cuisinart (mini). Started with 1/2 the Dijon and used stevia instead of sugar. Ended up doubling the herbs as also suggested. A real winner for everyday.
